Creamed Peas
Makes 6 servings
2 tablespoons butter or margarine
2 tablespoons all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup milk
2 teaspoons sugar
2 (10-ounce) packages frozen green peas Or Two Cans Of Le Seuer
Peas Drained
In a medium-large saucepan, melt the butter. Add flour, salt and
pepper; cook over low heat until bubbly. Gradually add milk and
sugar; cook and stir until thickened. Cook peas according to
package directions; drain. Stir into the sauce and heat through.
Creamed Peas And Onions
2 cup shelled peas or 1 (10 oz.) pkg. frozen peas
1 cup whole pearl onions or frozen sm. whole onions
1 Tbsp. butter or margarine
1 Tbsp. all-purpose flour
1/2 tsp. salt
Dash white pepper
1 cup milk
Grated Parmesan cheese
In a covered saucepan cook fresh peas and pearl or frozen onions in
boiling salted water until tender, about 10 minutes. (If using frozen
peas, add to onions only during the last 5 minutes.) Drain peas and
onions well. Meanwhile, melt butter or margarine in saucepan over low
heat. Blend in flour, salt and white pepper. Add milk all at once, cook
and stir until thickened and bubbly. Pour over hot vegetables; stir to
coat vegetables. Serve in sauce dishes. Pass Parmesan cheese. Makes 4
servings.
