I want to brine some bell peppers and the only recipe I have says to use
'canning salt' I don't have any, so can I use regular table salt?
Any help would be greatly appreciated.

National Center for Home Food Preservation
http://nchfp.uga.edu/how/can_06/salts_pickling.html
says:
Use of canning or pickling salt is recommended. Fermented and
non-fermented pickles may be safely made using either iodized or
non-iodized table salt. However, non-caking materials added to table
salts may make the brine cloudy.

Ross.

Thanks, Ross. Does the cloudiness affect the quality? I am just interested
in brining bell peppers for use in cooking.

If your table salt has iodine in it it will affect your peppers by
changing the color. I buy table salt without iodine and it is the same
as canning salt and much cheaper.

Ok, thanks George. I will have a look around and see what I can find. Does
the discolouring affect the quality though?

Table salt will work just fine for the task mentioned. If a person got
serious into canning it would be good to snag the canning/pickling salt.

Just a thought, but would Kosher Salt work instead of canning
salt?

IIRC Kosher salt is less expensive than the stuff labeled for
canning use. I've used Kosher salt for canning and pickles in
the distant past with good results.

Nyssa, who hasn't had enough cukes to pickle anything in recent
years
