It's been years since I had a piece of halibut worth shouting about! I
saw it at the fish dept in the supermarket this a.m. and it was clear
white and looked good, even at $9.

I put it in hot butter and lightly fried it either side and it was
great, just the way halibut used to be. I did a piece of corn and
some green beans with it.

Sounds good. We had Costoc's Atlantic salmon fillets and they were
delicious. Megatron also made air fryer fries and steamed asparagus. I
don't know where the asparagus was from, but it was nice, thick stemmed,
fresh spring asparagus and it was delicious.

Never had it. Went to the store Tuesday and they had halibut steaks. I
had just ordered scallops and the guy was wrapping them when I noticed
it. I did not want to keep it long or freeze it so I passed but will go
back soon.

My first thought was grilling but yours sounds good with butter. How
thick of a piece did you have?

I think the last halibut I saw was more than $20/lb, here in the middle
of the continent.

I haven't a clue how Jill cooks it. I put some butter in a pan,
heated it, placed halibut in, turned once and placed on plate.

It was so good I will ask the man at the fish counter whether it would
normally have gone for export.

Sorry to hear the raccoons have treated the ferals badly. My mother
had four feral cats she tamed when they lived in Spain. Two would
eventually go in the house but the other two, never.

The cat I have now was a kitten born to a feral cat in Toronto when
they were doing their catch, spay and release programme. They let the
mum go but kept the kitten for rehoming.

It was about an inch thick and very white/translucent. If it's
yellowed, don't buy it. I would hesitate to grill because it needs to
be cooked relatively swiftly, it has a very delicate flavour. Back in
the day when it was reasonably priced I used to buy a whole baby
halibut and butter a dish, put fish in, place in 425° oven and bake
for about 15 minutes. If I saw a whole baby halibut these days guess
I would need to Brinks truck with me to pay for it :-)

Why? The corn was young corn, I just nuked it for 3 minutes in it's
wrapping. The beans were also some of the first in. I don't add
bread or spuds to it for just me as I don't particularly care for
either, if that's what you mean by spartan.

The fish sounds nice but the corn and the beans, just like that,
sounds a bit elemental to me. Corn in general, actually. I know it's
popular in the US.

Really fresh halibut has a very delicate flavour, I don't season it at
all because I like to taste the fish, not the salt or pepper!

I have been in Europe several times during asparagus season, and it was
often white. I had the impression that it was from Spain. I have seen
white asparagus in stores around here, but it was always imported. The
local farmers markets and produce stands sell only green.

It was interesting to be in Germany during asparagus season because they
really celebrated the stuff. Many restaurants had special asparagus
menus, and they served huge portions of it. Heck, if you get a dish with
asparagus here it is a side dish and a small one at that, 3-4 spears
tops. At one restaurant in Bavaria my serving of asparagus was close to
a pound. There was no way I could eat it all.

I had white asparagus (the norm in mainland Europe) topped with foie
gras poelé in a restaurant in Strasbourg before starting a biking trip
in Alsace. Unfortunately, it wasn't on the menu a week later when we
returned.

I can only imagine how good that would be. We spent a couple days there
and I have fond memories of the great food. I have to admit I have
never had foie gras. Having lived with gall bladder issues for many
years I rarely ate anything really fatty.

I had to laugh at a story my nephew told me when we was a chef at a
winery restaurant in Niagara on the Lake. Someone sent back their order
of foie gras because it was too fatty.

Fresh halibut steaks grilled are excellent, a little s n'p and a
drizzle of butter is all they need. Halibut are large fish, a 1" thk
slab is all you'd need for two meals. The next day halibut steak from
the fridge with horse radish, mayo, and lemom is deelish.

The (white) asparagus season is a big deal in the Netherlands and, no
doubt, Germany. But in Australia, I've only seen it once. It was dried
out and only good to light a fire with.

You need sandy soils, because white asparagus has to grow under
(heaped) ground.
