3lbs of boned and skinned chicken thighs with some de-tendonized
leg meat chunks, thigh scraps, and ground skin used as a filler
and binder for any air gaps. Cured using sodium nitrite and salt.
Garlic powder, a little thyme, rosemary, MSG, and a little pecan
liquid smoke. All meat-glued together using a couple tablespoons
Ativa RM (Monsanto Transglutaiminase).
I only cut off a small piece, but I nailed it. Even YOU would eat
this (it being all thighs). Its super tender and not slimy. I'll
post sliced pictures tomorrow or so.
