I made this today and IMO it's much better than pancakes. Also quick and easy.
Did it a little different than the recipe above.
Used 100% Buckwheat flour
Toasted some pine nuts and added diced pear
Poured the batter over the pine nuts and pear
Baked
The buckwheat flour makes for a denser product but I like the flavor.
Served with warm maple syrup.
