What will you be chowing down on tonight?? Steak? Pork?
Chicken? Fish?

It's going to be chicken and dressing here along with jellied
cranberry sauce. Maybe green beans, too, but mashed
potatoes sound tempting as well. Yes, that's two starches or
maybe broccoli and cheese sauce. Hmmmmmm, decisions,
decisions.

Boneless chicken breasts cubed and mixed into the dressing
so all will cook together and no carcass or carving to contend
with.

I picked up a chunk of Atlantic salmon. We will bake it and serve it
with some mango avocado salsa, air fries, steamed broccoli and air
fries. I have to make the salsa but my wife will look after the rest.
Works for me.

That sounds very good Dave. I eat a lot of Salmon, but rarely with
much variety in terms of sauces, etc. Mainly I just eat it plain
grilled or with pesto, which I love.

Care to share your mango avocado salsa? Thanks.

There are beans in the pressure cooker ~3:1 ratio of
pintos to black beans. They'll be pureed and fried.
I have a sous vided tenderloin that I'l cut pieces off
and sear super hot. One avocado that's in the fridge,
probably perfect right now. I'm about to go to the
store to get a couple of tomatillos for salsa. Taking
a package of the nice El Milagro corn tortillas out of
the freezer.

I forgot to send this. Now I'm back from the store,
and I found a fairly ripe serrano to add to the
jalapeno I already had. I'm boiling the tomatillo.
Everything else I'm using raw.

It's pretty simple. Mango should be somewhat firm. You don't want a soft
one. The avocado should be just ripe... not ready for guacamole. The
amount of hot red pepper depends on the type and how hot they are. I
used a Serrano tonight, about a 3" piece of it. If I used a Thai birds
eye I would use about a 1/4 of one.

Start with one mango and one avocado, peel and chop. Add about 1/2 cup
finely chopped red onion and the pepper. Sprinkle with fresh lime
juice, season with just a little salt and add some chopped cilatron. It
can be made a hour or two in advance or last minute. It does not need to
sit and it doesn't keep very long.

I found a recipe online that is basically what I do. Other online
recipes call for olive oil, but that sounds a little odd to me when
having it with salmon.

It is also good with arctic char or trout. It is also worked with chicken.

A big salad topped with sliced chicken breast and dressed with
garlicky lemon vinaigrette. A slice of bread to sop up the
vinaigrette.

Lunch was a quesadilla. I was whipped from snowblowing. Flour
tortilla, pepperjack cheese, salsa, shredded lettuce.

I have some leftover duck udon soup in the fridge (Thursday's carryout
lunch); maybe I'll have that tomorrow.

They are sometimes as cheap as 3/$1 in StL. When we
vacationed in Puerto Rico, mango trees were everywhere.
You could pull off the road on Federal land and just pick
mangoes up off the ground that are perfectly ripe.
