i always have cooked barley, or farro, or bulgur wheat in the 'fridge to
put on salads. i cook it in mirepoix, chicken, or beef stock based on
what my taste-buds say on sundays when i do it. they all have a lovely
flavor and texture. i concur, barley is great in many things. i prefer
eating whole grains vs processed grains. i started doing that when i
nearly completely eliminated simple carbs from my diet, mainly bread-
stuffs and pasta.
