I smoked two 7 and a bit over pounds pork butts yesterday. After smoking
but far from being done, they were tightly covered and into the refrigerator.
About 2 hours ago they went into a low-temperature oven, still tightly
covered, to finish. An extra hour of cooking time was added to give them
time to come up to temperature before cooking.

After a 30 minute rest and they are fall-apart tender they will be shredded
and shared with a couple of neighbors. The rest and most of the potato
salad will travel across the alley with me to another neighbors house for
a very small get together.

making homemade salisbury steak and he said it sounded like a Hungry Man
frozen dinner. I've never bought one but it's clear he has. For all we
know he still does.

The cheap Banquet frozen dinners make a really good version.
I still have one in my freezer. It's a good standby meal.
Some of the Hungry Man dinners are good too.

Could be much better than what you make. You don't
even know as you've never tried them. They work well
for me. Problem with that?

Nope, I've got no problem with that. Hey, I was j/k! Heh.

When my brothers and I were kids and our parents were going out we
sometimes got to eat TV dinners. This was back when they came in foil
and had to be heated the oven. I have no idea what the brand was but as
kids we thought it was great fun! It was a treat to be able to eat on
TV trays sitting in front of the TV. :)

When I buy frozen entrees as a "standby meal" it's usually Stouffer's
brand. I also make my own frozen dinners using leftovers. I bought
divided covered plates years ago specifically for that purpose. They
are similar to these but I sure as heck didn't pay this much for them:

It's too darned hot to sit on the patio reading. I'll stay indoors in
the AC, thanks. I picked up several more books from the Cannery
yesterday. It's nice having a little "library" here. I enjoy reading,
got a problem with that? When I don't post here for several days you
can bet I'm kicked back reading a book. Buffy is usually right next to
me on the couch. She gives herself ear scritches on the spine of the
book and purrs. :)

BTW, despite what the TROLL claimed, Buffy couldn't care less when I sit
outside and read. She doesn't sit and stare at me from inside.

Glad to hear that the hawk-buffy thing was a joke.
I never saw the original post so I thought it was true at
first. What a nightmare that would have been to haunt you
forever.

I just put a Stouffer's lasagne in the oven. Lunch today.
Homemade is better but Stouffer's does a fairly good job
for way less trouble. :)

I prefer Stouffer's Spinach souffle as a side dish. When making lasagna
from scratch I prefer to use bulk hot Italian sausage rather than ground
beef. My preference. <shrug>

I've had the 'hungry man' line at times. They aren't bad for a quick
fix when my back is giving me grief and don't want to cook. Just like
I got a cheap Harris Teeter premade frozen pizza today (Sausage and
Pepperoni). We'll dress it up with onions, black olives, bell peppers
(red, yellow, orange and green available in the crisper), canned
mushrooms, and thin slivers of cheese. I think it was 2.39$ Suitably
sized for us 2 with some leftovers. I don't always want to make a
pizza from scratch when Don gets a hankering for one.

I also got a 'Healthy Choice' 'Cafe Steamers' in Mexican-style street
corn with roasted chicken breast. That's for Wednesday when I actually
go in to work. As I've said before, I am 'mostly a scratch cook' but I
do get some oddiments from the frozen section. Don snagged some frozen
hash browns which he dresses up with some onion, bell pepper, S&P then
fries with a little butter and olive oil to have with his eggs in the
morning.

My shopping trip if curious:

1 big ham
Family pack of 'country ribs' (pork, not actually ribs but nicely meaty)
Pork ribs (smaller rack)
2 whole trout
1 lb snapper steaks
small bag water mussels

1 frozen pizza
1 TV dinner
1 bag frozen hash browns (cube type)

2 large yellow squash
2 3lb packs of cubed watermelon
1 small head green cabbage
1/2 small head purple cabbage
1 red onion
2lbs carrots
fresh mushrooms- standard type
3lbs mandarin oranges
1lb fresh cherries
5 ears of fresh corn (yes, in husk)
2 green bell peppers
1lb mixed colors mini-bell peppers

1lb Dried Black Eyed Peas
1lb Dried Split green peas
1lb Dried large Lima Beans (aka 'butterbeans')
1lb Dried Navy Beans
1lb Dried Yellow Lentils

1lb Butter
1 quart whole milk
1lb Cottage cheese
8oz ea blocks of Montery Jack and Colby Jack

Cat and Dog food

Beer (Lite and Bud)
Pepsi

5 cans Cream of mushroom soup

1 jar of Osteo Bi-flex
Systane eye drops
Nyquil

5 snicker bars

Thats literally it. I have flour, onions, potatoes and grow my own
lettuce (cropping nicely now) and Green onions. My Chinese Broccoli is
coming along nicely too. My apple trees will be eating ready in a week
and crop weekly for almost 2 months.

Works for us!

Looks like a happy time!

Don and I will defrost the pork ribs and try smoking 1/2 of them in our
electric smoker. I am guessing a dry rub will be best that time.

Homemade lasagne, I cook in the stove oven.
I have 2 ovens here, you have 3.

Only fail there was I forgot to make a salad to
go along with it. I always love a salad with
a certain dressing to go with spaghetti or lasagne.

For salad, all I had was carrots and onions so I
skipped it.

What I really ate that day was a pint of frozen
lima bean soup cooked with many carrots and a couple of
tuna salad sandwiches.

Watching that Nathan's hotdog contest was a bit
boring to me this year. Piggy Joey mananaged to
shove down 75. Good grief.

Even weirder was that woman that won and constantly
wiping her face on her sleeve. WTH? She was
obscessed with wiping her mouth every few bites.
It was noticable and strange.

homemade freezer meals. The ones I have are freezer/diswasher/microwave

Did you happen to see the show on the History Channel last night (a
rerun from 2019) 'The Food that Built America'? The McDonald brothers
were basically screwed out of their legacy after they created the
"Speedee Service System" fast food model. Initially they only sold
burgers, fries and shakes. A man named Ray Kroc, who was a man who sold
milkshake machines at the time, convinced them to let him set up
franchise operations. Kroc got tired of sharing the profits. He bought
their name and the "speedee" concept for a mere $2.7 million. They
agreed as long as they could keep running their original McDonald's
restaurant...

Even more interesting (to me) in the show was the cereal wars between
Kellogg's and CW Post. Oh, and Hershey and Mars chocolate bars. Fun stuff!

My smoker is not worth investing in a thermometer. I've known it
doesn't work since day #1. I just use one of several
polders/Taylors and run the probe through a vent. You just have to
keep the display out of the sun.

LOL, I generally do a fairly deepdish sort. O don't add spinach to

There actually was a time back when Sheldon was using AOL that they
weren't carrying his posts. He had no control over that - somebody
at Google did that. But it disappeared in one of the many Google
Groups re-writes and when Shelly had to move news servers since AOL
shut down most of their service.

No Steve, it was ribs with the bone in set that was frozen.

The OTHER set was 'country pork rib family pack' and not intended to be
smoked. That was split down to sets of 4, vacumn sealed then frozen
for use later.

It's all about local availability. Locally we get frozen (or frozen
then defrosted) bone in ribs but get fresh pork butt and hams.

If it helps, I don't use a particularily expensive olive oil. It's
more than 2.22 a quart but I am not aware of any that is that price.
Mine's for cooking. Colavita Roasted Garlic Olive oil, quart. About
6-7$ I think. Replaced Bertoli when the subcribe and save on Amazon
went away and liked it as the faint garlic matches our cooking.

A few years ago, someone opened up a specialty store only selling
Olive Oil. You could go in and get free samples to taste then
choose one to buy. Never did go there but it would be good now.

I went up to the bank 2 weeks ago and as I was leaving, I did
look for it but seems to be gone now. Oh well.

Anyone here have a recommendation for a very flavorful EVOO
that a grocery store might sell?

Those ribs would never sell in NY, in fact it would be illegal to sell
once frozen pork as fresh.

Now Steve 'assumes' we got them as fresh and froze them: The pork ribs
are already fresh - you just bought them.

We bought them frozen. Only the 'Country pork ribs' (boneless bought in
a family pack) were 'fresh' and repackaged then vacumn sealed for the
freezer.

I think they do sell Colvita at HT and might be other places. Is there
a particular type you want and a price point you'd like to aim at?

The more expensive ones aren't really used for cooking often but making
dressings or bread dipping and so on.
