Glass vs. aluminum

I'm making a recipe I've done a few times with great success, to take to a July
4th picnic.

It's called Chocolate Truffle pie. Very simple and easy to make.

In the past, I've used 9" Pyrex pie plates. For the picnic, I'd like to use
disposable aluminum pie plates so I don't have to retrieve them later and also
to cut down on weight.

My question is, will I have to adjust cooking time going from glass to aluminum?

Ingredients:

2-1/2 pkg. (4 oz. each) BAKER'S Semi-Sweet Chocolate (10 oz.), broken into
pieces
1/2 cup whipping cream
4 eggs
1/2 cup sugar
1/4 cup flour
1 cup thawed COOL WHIP Whipped Topping

Directions:

HEAT oven to 325°F.

MICROWAVE chocolate and cream in microwaveable bowl on HIGH 2 min. or until
chocolate is almost melted; stir until completely melted. Cool.

WHISK in eggs, sugar and flour. Pour into 9-inch pie plate sprayed with cooking
spray.

BAKE 35 min. or until edge of pie is puffed but center is still slightly soft;
cool. Serve topped with COOL WHIP.

The difference between metal and glass won't be noticed. It's a
partially cooked pie that you let it sit in the refrigerator until it
takes on the characteristics of a chocolate candy bar. Personally, it
isn't something I'd take to a 4th of July picnic - but that's your
choice.

No.

The alum pan will come to full heat even quicker than the glass pan.
Yer sprmkt should have alum pie pans, so no need to buy a frozen pie,
first. HTH.

Probably. Glass is a heat insulator, while aluminum is an excellent
heat conductor. I find different baking times for glass vs. shiny
aluminum vs darkened aluminum.

How do you test for "doneness" now?

Yep. And YUM, whipped cream!

I was sorely disappointed that my local grocers didn't have just plain
as possible 40% cream for the batches of Majical Garlic Potatues I
made for a family float trip I went on last week. All they had were
several varieties of "whipping cream"! I am very wary of whipping
cream, ever since years ago the guar gum they put in some whipping
creams ruined a batch of my English Toffee!

I'd give a tad more time to the glass-baked stuff.

When you say something about adding to the weight --are you carrying these to the top of a mountain? : ))

I'm not a fan of much cooking gear which is disposable, but that's a topic for another day.

I stick a piece of freezer tape and jot my name or initials on bottom of any serving pieces I want back. So far, no thefts.

Some people really hate Cool Whip! OTOH, my guess is some people never tried to transport whipped cream to a picnic. Cool Whip is a great and practical substitute. I'd rather have canned whipped cream or topping. I like that stuff better than whipped cream.

I understand this. That's why I said canned whipped cream OR topping. Topping is not cream. I like the canned stuff more than whipped cream. Whipped cream is not very stable and is only good for a few minutes after it's made and for that, I will not stand. ;)

I'm a Cool Whip hater. It tastes (IIRC) oversweetened and oddly metallic.

Then again, I wouldn't take whipped cream to a picnic; I'd choose
some other dessert that would travel better.

Not really, it's more of a sweetener to my tastes but it is
rich, and I always add vanilla too. But you'd just have to try
it for yourself. It doesn't have the heavy butter sort of
texture and flavor of white chocolate.

I got the method from someone here, maybe it was Kalmia, and it
came from a website I can't recall. I've added my temperature
handling which gives me the best results. Melt 3 oz white
chocolate until soft but not totally melted, stir in 1/4 cup
room temperature heavy (40%) cream and whisk until smooth. (Room
temp is to neither harden the white chocolate nor take too long
to cool down.) Refrigerate white chocolate mix until cool. Whip
1 cup chilled heavy cream until there are distinct tracer marks,
then whip in the white chocolate mixture. Try not to overbeat,
it will hold very well. If overbeaten it will get grainy. We use
this topping on our key lime pie for our dessert entry at
barbecue contests. We consistently get first through fourth
place calls with that dessert. So personally I swear by this
stuff.

OK, double cream - you got me sold. I'll take it! I don't believe that
I've ever seen double cream in the US - well, at least in my tiny piece
of the US.

Two things are sure: 1) American just love whipped cream/toppings. 2)

CW is pretty sweet. My guess is that's why it's so popular. You can sell

I think grease whip was popular cuz it was cheap and convenient. BTW,
the "sugar" is really HFCS. They've since added milk, but how much.
Still tastes like grease, to me.

I am not even crazy about whipped cream. I will occasionally have a
small dab of it on something. My father, a couple of my brothers loved
it. My wife loves the stuff.

I hate that stuff too. Between Cool Whip and white chocolate, white
chocolate is the one that tastes like grease to me.

I am not saying it will hold up at a picnic, but when I want stabilize
whipped cream, I whip it and then let it sit in a fine mesh strainer
suspended over a bowl overnight to drain. It lasts for days after
that.

I think it's kind of goofy too. OTOH, I really like Zero candy bars.
It's coated with some kind of material they call "white fudge." Beats
the heck out of me what that substance is. All I know is that it doesn't
melt which makes it suitable for shipping to this rock (I guess...)

What's the problem? It says it contains milk. :)

I'm making some Vietnamese coffee and I'd sure like some condensed milk
to put in there but there's no convenient way to store a can of that in
the office so I gotta just use non-dairy creamer. What's in that stuff,
I don't know. All I know is that it won't spoil after a couple of weeks.
That's just one of the realities of eating in the office.

Those are pretty damn cool. I used to have one back in the 70s. It was
beautiful solid cast aluminum - very heavy and simple and a great
example of 50s space-age design. To dispense whipped cream, you
unscrewed the top nose cone. I even had the original box. This is an
ugly example. I couldn't find any CO2 cartridges so I gave it to my
neighbor.

It's not whipped white chocolate. It's whipped cream sweetened
with white chocolate. FYI white chocolate is mostly cocoa butter
and sugar. Cool Whip is artificial stuff, but some of it has a
little cream in it. Cool Whip is no cream. I have no idea what
you think it is we are discussing that is made with milk and
water.

40% butterfat. The 40% stuff is pretty darn thick. Usually it is

We could have double cream if producers thought there was a market
for it. However, since "Americans buy on price", there's probably
a perception that not enough people would be willing to pay for it.
British double cream is 48% fat; American heavy cream is minimum
36% fat. They'd have to charge 1/3 more for double cream than
heavy cream.

Maybe it will make an appearance now that fat is not the enemy anymore
and Paleo is big. However, I'm satisfied with our 36% fat heavy
cream, like it when it's whipped and have no burning desire for a
thicker pouring cream.

Except it takes time to do that. Americans want it now, just like
umami flavor. Why take the time to construct it when you can make it
instant? For me, it's fine to do it by hand - that way I eat less,
because calories still count.

I don't think it's possible to cook much and not have one of
those unless you're a masochist. I have four in sizes, one is
coated for easy release.

However the nitrous chargers are pretty cool. I've been tempted
a few times but don't have one yet.

It's one of my most important kitchen tools. I call it a "French whisk." I got 4 or 5 of them and I love my French whisk. OTOH, I wouldn't use a whisk or a fork to whip cream.
