Scallops and asparagus is a great choice... just needs something baked
to make it filling, jumbo corn muffins would do it. I like corn
muffins with orange marmalade.
Tonight I ate egg drop soup of diced pork chop, very filling.

The plate you used is a PERFECT compliment to the scallops and
asparagus, imo. What a nice presentation. I'll even vote that the best

However... Good entree for a 3 or more course dinner.
An appetizer something might be good.
IOW, not quite a full meal to me. I would want a bit more.

I usually just fry briefly in butter but this is a recipe given to me
by an Italian which, although it looks odd, tastes delicious.

Scallops with Peaches

Ingredients:

25 ml butter
454 g of scallops
15 ml lemon juice
1 ml freshly ground pepper
4 strips of partially cooked bacon
5 fresh peaches (peeled and quartered) or 796 ml of canned peaches
well drained
125 ml grated Swiss Cheese

Butter 2litre pan or casserole. Add scallops and sprinkle with lemon
juice and pepper.

Top with peaches, then bacon and finally cheese. Bake at 180 degrees
Celsius for 15-20 minutes until cheese is melted and scallops are
opaque in colour and just cooked through.



Yield: Serves 4

It is an odd combination. Scallops and bacon are nothing new. But for
the totality of the recipe you'd need a confluence of scallop season and
peach season to coincide. Or just use canned peaches and frozen
scallops. ;)

The original recipse lucretia posted said "5 fresh peaches (peeled and
quartered) or 796 ml of canned peaches well drained". She said she
prefers the canned. Fresh peaches won't be available in South Carolina
until April or so. Lucretia is in Canada on the other side of North
America from me so I couldn't say when fresh peaches might be available.

I rarely eat anything canned, but in this instance I do find the
canned peaches are nicer than fresh. It is an odd dish, but it sure
is good. The man who gave me the recipe was Italian, sadly he died of
pancreatic cancer so every so often I do the scallops this way in his
memory.

I think for the purposes of this recipe, using fresh peaches could be
risky compared to canned being more predicable. Fresh peaches vary a
hell of a lot.

St. Louis is bad enough. After we retire, we're planning to
spend winters in Mexico, like Guadalajara or Querétaro City.
Mid-Dec thru mid-March the nights are chilly, and the days
pleasantly warm. Lodging is cheap, and the food is both
cheap, and exactly what we both love. None of this snow
shit.

away from people. There are a couple of TV shows about them. Having
supplied dropped in by airplane every couple of months. Otherwise
living off the land, cutting wood for heat, fishing and hunting.

If I'd do that, which I won't, I'd do it in a warm climate, not in the
cold. I read a book recently about a Dutch woman and her Kiwi man who
lived like that in the (cold) NZ wilderness. I'd rather be in jail.

Some years ago a woman was interviewed on the CBC. She hiked for 2 days
to her cabin from an already isolated spot in the BC mountains. She
would visit "civilization" every few months for essential supplies but
otherwise preferred her loneliness.

True enough but we didn't. David was Royal Navy and his appointer
said we were going to Simonstown, SA. He said as I was marching for
Anti Apartheid he didn't think it was a good idea! So his appointer
said 'Well there is this place Nova Scotia...' and we came here.

Interestingly enough our chief doctor in NS was born in Zimbabwe and
he has done an excellent job of keeping peoples spiritis up and having
us conform to covid regs.

This is a man who refused to mandate vaccine passports claiming that it
would be too divisive but then dumped on Ontario Premier Doug Ford when
he was reluctant to. Then after all the provinces had the vaccine
mandate imposed a federal vaccine passport was a good idea.

He is trying to pass the protestors off as right wing fascists. Yes,
there probably were a couple Confederate flags and some swastikas,
possible planted. My great nephew walked through the protest area and
recorded a 25 minute video. There were lots of Canadian flags but not a
single confederate flag or swastika. This is typical of his style. He
deals with people with legitimate complaints by dismissing them as racists.

The other really stupid thing is, they want him to come out and meet
with them! Great idea since he has Covid right now and most of them

Yes I use canned pineapple also for cheesecakes but I prefer fresh
peaches to eat normally, it's just that for some reason, in this
recipe (with the scallops) canned seem better.

I think that would be a great idea. If he really has Covid he could go
around shaking hands and talking up close and personal with no mask. He
has nothing to lose if he already has it and they see no need for masks
or vaccination. He can spread it to them and enjoy an I told you so
moment. However, I am not convinced he really has Covid. It just serves
as a convenient excuse to run away and hide.

This is one of my wife's favourite recipes for a peach pie. It is a
single crust pie and the filling is flour, sugar and sour cream. poured
over the prepared peaches. It is delicious.


Elmira Peach Pie (from the Laura Secord Cookbook)

Preheat oven to 450 degrees F.



Prepare sufficient pastry and line a 9inch pie plate. Trim, flute edge,
but do not prick.



Beat with a rotary beater until smooth

1/3 cup all purpose flour

1/2 cup granulated sugar

1 cup thick dairy sour cream



Arrange flat edge down in concentric circles in pie shell



5 cups quartered, peeled peaches (about 9)



Pour sour cream mixture over top.



Bake in 450 degree F. oven for 15 minutes

Reduce heat to 350 degrees F. and bake for 30 to 35 minutes more, or
until set.



Sprinkle over hot pie



1/4 cup lightly packed brown sugar



Broil for 2 to 3 minutes or sugar is melted.

Pineapple upside down cake was very popular when I was young. I am sorry
to have seen it decline in popularity. I love it and still occasionally
make one.

Bruce, a little more than 60% of eligible voters voted in 2020, and a
little less than 50% voted for Trump, so that means that less than
1/3 are certifiably deplorable, and it's less than that because a lot
of them are just stupid.
