OT: Anole Lizard

I thought my cat was just getting under my feet trying to get me to play
with her while I'm typing.

I was wrong. I just saw what she was fussing about. I spotted a small
green Anole lizard climbing up the curtain next to my desk. I tried to
grab it so I could toss it outside. It was too fast for me. It leaped
away and ran back behind the desk. So, for now, I have a small lizard
occupying this corner of the living room.

OB Food: pan seared steak, buttered new potatoes and green beans for
dinner. Buffy might catch a lizard.

  I've got pizza dough rising and sauce thawing  , the  meats are
prepared and I'm ready to roll the dough out for a couple of big fat
calzones . Well , now they're in the oven and my dough didn't turn out
quite right . But they'll still be good to eat even if they are
not-quite-beautiful .

Did you know that lizards cannot run and breathe at the same time? That's because they have NO MYOGLOBIN in their muscles! They are made of White Meat! Not Red Meat! Myoglobin is a substance which stores oxygen when the muscles contract and shut off blood flow temporarily!

Ever notice that a lizard runs fast away then stops as if they are daring you to chase them? Nope! That is your own EGOCENTRICITY! They stop to BREATHE!

I don't need to know about former CEO's. You can't even do a proper search

  A calzone is basically a big pizza pocket . Roll the dough out as
usual , put all the ingredients on one half and fold and seal - like a
turnover . Most commercial places make them without sauce inside and
provide dipping sauce , I put it all inside . We like them  a lot but
it's a lot of work and I don't make them often . Makes them a treat when
I do ... and there are some here that feel "presentation" is as
important - or more so - as how things taste . Actually they turned out
quite nice , and since I make 'em big there's another meal there . My
wife likes them cold for breakfast , calls it the cold pizza test . And
mine always pass .

  The dough :
1 cup water - might have to add a little more depending on how dry your
flour is
2 tbsp olive oil
1 tsp salt
3 cups flour - the recipe calls for AP
1 tbsp yeast
  I process it in my mixer until it balls up on the hook plus about 4
minutes , let it rise until double in a bowl (sprayed with OO cooking
spray) then divide in 2 and let rise again until double . Roll it out
and add toppings , bake at 450°F for about 18-20 minutes on a preheated
pizza stone . I make them on parchment paper to make it easy to transfer
to the stone .
  For toppings I usually use homemade sauce followed by ground beef ,
Italian sausage , pepperoni , onions , mushrooms , sliced black olives ,
and topped with cheese - soy cheese for hers and mozzarella on mine .

The lizard climbed back up and scrambled onto a piece of moulding behind
the curtains. The curtains are sheers; Buffy's claws could rip them to
shreds in just seconds so I don't encourage that kind of behaviour. I
managed to grab it and turned it loose on the patio. :)

We've got those around here, too. They're blue-tailed skinks and are a
lot bigger than the tiny Anole's. Last year I walked into the master
bathroom where the tub and toilet are (separate from the sink area) and
there one sat in the middle of the tile floor! Luckily it didn't try to
run - you're right, they're F A S T! I dropped an empty shoebox over
it, slid a piece of cardboard underneath and took it outside. :)

I find it very unamerican of you to cook Italian food. Unless you
stick little American flags in the calzone before you serve. Then it's
ok.

  I've been out shoveling rabbit poo ... 2 loads in my yard trailer to
add to the garden and flower beds ! My neighbor's rabbits produce more
fertilizer than he can use so ...

  OK , here's the latest - and I think best - version of my sauce for
pizza and calzones .
3 pints diced tomatoes
(I use 1 qt of our home canned plus about 5 frozen Roma tomatoes)
1 6 oz can of tomato paste
4-6 cloves fresh garlic - smashed then chopped fine for maximum flavor
1/2 medium onion , fine chop
2 tbsp oregano
1 tbsp basil
1 tbsp italian seasoning
1 1/2 tsp salt
1 medium Serrano pepper (or 1 small cayenne) seeds removed
2 medium bay leaves
2 tbsp dried parsley
1 tsp chili powder
1 tbsp brown sugar
4 tbsp red wine
dash thyme
1 tsp dried celery flakes

  Sautee the onions and garlic in a little olive oil (not listed) until
just translucent . Put all ingredients in an appropriate size sauce pan
and bring to a boil . Reduce heat to a very low simmer , simmer for 2-4
hours . You'll know when it's "right" . Feel free to jigger the spice
balance to your taste , some like a more pronounced basil flavor , some
lean towards more oregano . The current version has a very balanced
flavor profile , you get hints and nuances of many of the seasonings .

Bravo!  Paying your taxes isn't obscure trivia.  Even if you forgot 4/15
a few times it was all over the news.  Sure, you get a short break this
year but your past years bills just keep on accruing interest and
penalties.  It also cost you a $1200 gift from the government.  Nice job!

Never was a problem here. My daughter had a pet anole in a cage
and
always bought crickets to feed it.

One day she found a praying mantis outside and adopted it.
It pretty much stayed on top of her bedroom curtain.
Every day or two, she would feed it a cricket.
Stupid crickets would immediately start climbing up the
curtain. The preying mantis would immediately lean over
and watch it climb up then eat it when it got in range.
Interesting to watch.

Indeed it will... if it doesn't get eaten by a snake or a larger lizard.
Lots of snakes around right now. A couple of weeks ago when I opened
the garage door a harmless black snake right outside the door was
startled by the movement. It slithered very quickly inside the garage
along the wall waaaay to the back where I have some shelves and tools.
I left the garage door open so it could find its' way back out again. I
haven't encountered it again so here's hoping it did find the way out. :)

(And you think I've never been fishing. Heh.)

Here's a funny thing. There aren't any brown crickets down here. I
sure as heck don't miss the sound of that lone cricket... the one that
starts up with the noise the minute you try to go to sleep and you can
never find it. ;)

Praying mantis are weird looking creatures. I've only seen one of them
since I've been here. It was clinging to the screen on one of the
windows. I was perfectly happy it was outside.

Just to mention. While a black snake is harmless as in not
venomous, they will bite the hell out of you if you try to
grab it wrong.

This is exactly why I don't try to grab them. LOL

A few years back one of the guys working out back encountered a black
snake near my house. I was sitting here at the computer, watching out
the window He started stabbing at it with a garden rake.

I stepped outside and asked, "Is it a black snake?" Yes. I said, "It's
harmless. But if you keep poking it with that rake you're going to piss
it off. They do bite, ya know." The guy stopped poking it with the
rake and it slithered off.

A good motto is, don't bother the snake and the snake won't bother you.

  And in most cases that's just fine and dandy . But if I catch a
copperhead in areas I frequent he gets permanently relocated . Most end
up in a vulture or crow's belly . Black snakes get a pass unless they're
in the hen house . Once they find a way in you won't keep them out .

Snake bites can hurt, especially if it is a really big snake. I used to
have a fear of rattle snakes. Somewhere along the line I heard that
rattle snake bites are rarely fatal, so that changed from fear to a
healthy respect for them. Them I learned that the bites are
excruciatingly painful and can inflict horrible damage to the body, so
I reverted back to fear. Lucky for me they are quite rare here.

Some can grow to extraordinary size.

I have probably bumped into ten rattlesnakes in my life. When I was young,
I didn’t give them a chance. I still have a dandy hatband that I made
from one. As I got older and trained a couple of hunting dogs, I
appreciated the rattlesnake's tendency to give a warning to my dogs and me.
My animosity evaporated. I still kill black widow spiders, given the
opportunity. Nothing redeems them to me.
I was bitten by a lot of snakes and lizards in my youth. I knew they
didn’t pack venom. I was real good at local reptile identification, and
catching them by hand was a hobby. If a desert spiny lizard latches onto
your nose, it’s quite painful, and they don’t let go. Don’t ask.
