Leftover lamb chops

I never had to worry about leftover lamb chops. It just never happened
before. I had grabbed a pack of 8 chops at Costco because the price was
too good pass up and I was pretty sure we could manage to eat them. They
turned out to be much bigger than I was used to. We had three chops
leftover. Yesterday I stripped the meat off them. I tossed the bones
into a pot of water and simmered them for about an hour to make a broth
and to loosen the remaining bits of meat. I chopped up an onion, some
garlic and ginger and sauteed them and added some red curry, the chopped
meat and the broth and let it simmer. We served with peas and Jasmine
rice. It turned out great.

It just doesn't cross my threshold. Maybe someday I'll try it again, not
any time soon, though.

The main thing with lamb is not to overcook it or it goes dry and
tasteless. Try some again and cook it rare and see what you think.

I cannot remember the last time I bought lamb chops. Ground lamb, yes,
just last month. Oh, I bought lamb shanks a couple of months ago. Lamb
chops? It's been several years.

I'm glad the leftover chops worked out well for you in that manner.

I used to buy them on Tuesday. The local Stop & Shop would mark down
the unsold meats that day so I got them at half price. Eventually, they
did not put out as many for sale.
