Sous vide yum

Over last weekend I grabbed a pack of those "petite sirloin" steaks from the used meat bin. I like them because they are a smaller size steak, but they can be pretty chewy, so I like to sous vide them. I vacuum sealed them and put them in the water bath at 130/4-5 hours, kept two out for dinner and chilled and froze the rest.

Last evening we had a nice steak dinner. I made cauliflower mash, a little tomato salad with grape tomatoes, feta and basil, and some of those skinny little asparagus. My steak topping was garlic, onion, green onion, mushrooms, chopped bacon, red wine, a bit of beef stock, a dash of Worchestershire, fish sauce, a glug of steak sauce and the bag drippings. I make my steak topping in the cast iron pan I used to sear the steaks, don't want to waste any of that good stuff. I didn't take a picture of the steak after it was cut but they came out a nice medium rare and tender.

Last week on America's Test Kitchen they did two New York strips in a sous
vide and then finished them off in a caste iron skillet. Then the product
review section was on sous vides they had tested and then gave their recommendations of which to buy.

They also did poached/soft cooked eggs in the shell.

I am impressed but was surprised you have an electric range. I was really expecting one of those WOW gas ranges that take up 20 feet. I bet popeye has one. Lol.

That looks very nice and tasty. I question that cauliflower mash
but only because I've never tried it. How do you season that?

You use up valuable oxygen and exhale Co2 which is causing global

Relax, Gary. Bruce was pointing out John's hypocrisy in lambasting
others for their energy usage and crowing about his own righteousness,
while still eating meat. Meat (mass-produced grocery store meat) is a
big consumer of fresh water and fossil fuels, and pollutes with
comparatively little regulation. John is in the habit of ignoring
inconvenient facts like those, and that his precious electric car
gets its power from burning coal.

Well, John has issues which we all know. Not only his electric
car but he still owns "Baby 2" - his gas guzzling backup vehicle.

Bruce is anti-mammal meat (limited) but he eats seafood that also
burns earths resources for the boats to go out and catch the
food. He also drives a car and feeds his cat meat. No one that
eats anything he doesn't approve of get critisized. I guess he
knows best for all, eh?

Then there is Dsi1 and his constant racist personal problems with
others.

Bottom line... all 3 are hypocrites in their own personal way.
That would be fine with me except that all three of them like to
preach to others here. It's a "Let those without sin throw the
first stone" thing.

Exactly Gary. Precisely!! I have merely Dumped The Pump BECAUSE I CAN! The $10,000 just off 3 year lease 100% electric Nissan Leaf I bought early 2017 was something I have been WANTING TO DO for a LONG time! Think of the MONEY and the ENVIRONMENT I am saving! And my Leaf gets me there and back MOST times, which is why I retained this fabulous GAS BURNER "Baby II", to do everything the Leaf might not! Like yesterday drive down to 141 and Tesson Ferry to buy a $100 Strat copy, then ALL the way back up to Guitar Center Bridgeton to buy a hard case, 25ft cord, etc. then back to MY HOUSE! On the highway/ highway speeds! And I did not have to worry about my Leaf's charge level! I just CHOSE to top off Baby II's tank with about $20 worth of STINK FUEL!!

My health food nazi ex sister in law foisted crickets on my son and his
girlfriend when they visited her last summer. She made pancakes for
breakfast and told them later that they had been made with crickets.

I use my food processor. In it I put cooked, drained cauliflower, some butter, sour cream, salt and pepper and process till smooth. Sometimes I add parsley. Sometimes I add butter sauteed chopped garlic. If you don't much like the "tang" of cauliflower, put one white potato in to cook with the cauliflower. It will add body to the mash and enrich the flavor. I do that most times.

Since I eat low carb cauliflower mash is a great substitute for mashed potatoes and everyone seems to love it.

I tried it and did not like it. Perhaps your blend would make a
difference. I grew up on mashed potatoes and when I ate the first
forkful of cauliflower it was very off putting to me. May have just
been expectations.

It was not bad, but it was not potatoes either. Maybe I'll try your
method.

They gave them thumbs up and one of the brands recommended was Anova. Also,
most any vessel would do and they did highly recommend getting as much air
out of the plastic bag and they said cooking oil worked extremely well for
displacing the air. Also, to cover your vessel with plastic wrap or a lid
to discourage evaporation.

Sous vides? <big groan>

That translates to "under vacuums". You can't cook anything "in a
sous vide" and ere are no devices called "sous vide".

They cooked them in a water bath using an immersion circulator.

And THIS is exactly why we need a new word/term for "sous vide", but
people think *I'm* crazy <grumble>.

I saw a documentary once where some company in the SF Bay Area
was making and selling cookies made with powdered crickets rather
than flour. People that tried them said they were good. huh huh -
hippies. ;)

I guess PETA doesn't care much about crickets. :)

Cauliflower mash ain't bad. Cauliflower rice is even more fun. They are kind of expensive compared to potatoes or rice though.

Have you tried mashed cauliflower patties fried in a black iron skillet
and done the same as potato patties. Has anybody here? Many seem to
like oven roasted cauliflower. Browning a cauliflower patty doesn't
seem like much of a stretch.
Since I have never tried either method with cauliflower, I'm just
asking. Is it a thing? I suppose I could google, but I won't for this.

Can't say that I have, only had it roasted in the oven. I just wish it weren't
so messy and bits flying and scattering everywhere when it's cut up.

I make potato patties out of leftover mashed potatoes. Put in egg, chopped green onion and cheese. Brown up well and serve as a breakfast side with over easy eggs. Delicious. Haven't done leftover cauliflower mash like that yet, but that's a good idea.

A small head of Cauliflower costs at least twice the price of a five
pound sack of potatoes. I think it's a horrific waste to destroy a
head of cauliflower to MAYBE save a few calories. I happen to like
cauliflower raw/pickled.

Haven't made mashed potatoes fer a couple mos. But, make hash browns
most every day. Perhaps I'll try yer recipe.

potatoes need to be kicked up a notch sometimes. i like boiled buttered potatoes. as well as many other styles. they may not be the most flavorful food around, but they're good. mashed, fried, home fries, hash browns, roesti, potatoes paprikash, potatoes with onions and mushrooms, french fries, ah c'mon. they are terrific! baked and roast potatoes, riced potatoes, potatoes in sausages(don't underestimate that, that makes a real good wonderfully textured and flavoured sausage), potato bread, potato strudel(yes, my godfather used to like that; didn't turn me on though), anna potatoes, duchesse potatoes,, smashed, etc.

Cauliflower is much the same. I like it curried, roasted,
tabouli-style, pickled, mixed with spaghetti sauce, etc.
I never eat it plain.

the first time i'd ever had boiled potatoes with skin on was when i worked in tobacco as a kid. the french canadians working there would eat the potatoes with skins on. i'd never heard of such a thing. but i grew to like them like that.

sounds great. my mum makes cauliflower in two ways. either simmered and then topped with breadcrumbs and sour cream, or breaded and fried. i love it breaded and fried.

Anything fried is YUM!! You could take an old stinky kayaking bootie and slice it up thin, bread it and fry it and people would go YUM! Kinda chewy!

My favorite way o eat cauliflower is raw, flowerettes seprated. stems
sliced thinly, and tossed with olive oil, fresh lemon juice, some
fresh herbs, minced curly leaf parsley works for me, salt and pepper.
