I just did a quick count of the items in my spice cabinet and spice
rack. There are more than 60 herbs and spices. Then there are several
bottles of vanilla, vanilla past, a half dozen hot sauces,
Whatsthisheresauce and a few others.

Bruce isn't really a cook. I use all of my spices in one dish or
another and scratch cook mostly. What I don't have is many that would
be defined as 'hot' because neither Don nor I like many hot spiced
foods.

I have quite a few only used for bread making (if I did cookies and
pastries, they would fit there too). ex: Lavendar, charnushka,
poppyseeds, 2 coffee blends. Probably 15 total that I use only for
breadmaking although some could be used in other ways.

There are some that are special use for seasonal dishes. Example:
Pumpkin pie spice blend, whole cloves, whole star anise.

There are some that are herb mixes. Example: Herbs De Province,
Italian Herb blend, MS Dash (2 types). Probably another 15 there.

All told, probably 150 here.

Well, yesterday I wanted to make chocolate cookies. I'd bought
chocolate bits and followed a recipe on the packaging. I had a small
oven tray and filled it with big table spoon sized dollops of cookie
batter. It came out tasting really well, but because the tray was so
small and I had so much dough, I ended up with one huge megacookie. A
chocolate cook, so to speak.

Last fall I did roasted cabbage wedges and sprinkled charnushka
seeds on it before eating. Delicious!

This tends to happen when making chocolate chip cookies with too much butter. Next time use pure hydrogenated vegetable fat instead.

Using brown sugar will also keep them a softer cookie and not spread
as much.

Not as much. Butter has water in it, but hydrogenated vegetable
fat doesn't. When the dough gets hot, the water makes the cookie
spread out.

Agreed 100%!!!
I made a batch yesterday for my d-i-l and the recipe specifies one stick
or 125g. Using a stick is very convenient but they hardly spread at all
and must be flattened before baking. That extra 11.6g makes all the
difference and they spread nicely.
