This the best caramel sauce EVER!!!!!!!!!!!!!


1 cup of sugar
1 tbsp corn syrup
1/4 cup of water
1/2 cum heavy cream
2 tbsp unsalted butter softened
1/2 tsp fine grain sea salt
1 tsp pure vanilla extract (not the artificial stuff)



In a large heavy sauce pan stir together sugar, syrup, and water

I use a dutch oven

this is the hard part heat the mixture on a med hi stir once to mix
well then wait for it to boil where you will not touch it then lower
the heat to a medium and wait for it to start to darken.

1 light brown.. very thin runny caramel has the least amount of flavor
will not solidify at cooler temps

2 medium brown little bit thicker has deep caramel flavor may solidify
at cooler temps

3. darker brown much richer caramel flavor will solidify at cooler
temps

I usually remove mine when the color is a very deep amber, but be
careful it is so easy to burn and ruin the entire batch

when I say solidify it does not get hard like concrete it is like that
thick chewable candy but will easily become runny when heated in
microwave.

decide which you want and you have to time it perfectly.

take the caramel OFF the heat right before it get the color shade that
you want, because it will continue to cook a bit after it has been
removed and it could burn.


with the pot off the heat use a wooden spoon and pour in the heavy
cream, be very careful because it will bubble and his and get really
angry at you. Stir the pot until the mixture becomes smooth being sure
to get the bottom of the pot to get all the darker bits.
Stir in the butter and salt

allow your caramel sauce to cool for a full 3 minutes then stir in
your vanilla extract.


If you make this you will never want another food again....

Uses.........

ICE cream for sure
over sauteed apples with a pinch of cinnamon
any dehydrated fruit
on freshly popped popcorn not the microwave crap but that will do in a
pinch
topped on any desert cake or pie like apple pie or pumpkin pie or a
chocolate cake

  Who cares ? The corn syrup and heavy cream nix it for our house , my
wife can't tolerate either . Much better IMO is my hot fudge sauce . She
can have that , but not the ice cream I usually serve it over . And hot
fudge sundaes were a particular favorite of hers .

And speaking of all caps, the USPO standardizes addresses in all caps with no punctuation.
I, for one, am still pleased to get snail mail from friends with the address in cursive with
punctuation where it usually appears. The friends who write to me pretty much learned
to write cursive with the same method, and our handwriting is very readable. I hear
cursive is being taught again in the schools, so hooray for that.

My two granddaughters both missed cursive. That's why I'm trying to get
the younger of the two to learn connected italics (calligraphy). My
favorite book, which I sent her a copy, has a great section on "Chancery
Cursive" (Chancery is a form of British italics), the first step in
learning calligraphy.

first day of school we asked our teacher, Miss McCord, if we'd be learning
how to write 'real' writing? We were mightily disappointed when she told us

How do you make it with no dairy? I love hot fudge over canned pears.

  I mix about 1 heaping tsp of cocoa with about 2/3c sugar and a half
tbsp of butter or margarine . Add just enough water to make a
medium-loose paste , and then nuke it for about a minute and a half -
stop about every 20 seconds or as needed to stir and keep it from
boiling over . I cook it until the graininess of the sugar disappears
and it gets smooth . Might take a bit of trial and error to get the
amount of water right for the consistency you want . Oh and I usually
mix a few drops of (real) vanilla in jest before serving it . This also
scales up nicely to using a sauce pan on the top burner - watch closely
so it doesn't scorch .

I was never impressed with soy milk, but almond milk is quite palatable.
Oak milk is great on cereal. My wife likes it in coffee.

I tried the almond milk because of my lactose issues and started using
it because it was pretty good. Then my wife came home from grocery
shopping with some oat milk. Given my history with lactose I was not
about to drink a glass of it but I tried it on cereal and it was
delicious. It was better than milk.

  His is about 80% milk , he gets it more because he wants whatever I'm
eating/drinking . I share beer with him too ... but not much , he can't
handle his likker . Gets all mushy and wants to lick .

Our Lynnwood store moved to a new location. Very nice. No problems with it
now or the Shoreline one. The rotted produce seems to be a thing of the
past. That being said, I only buy a select few things there. Much of it is
overpriced and available elsewhere for less. I guess if you want wine,

I am not really that big of a TJ's fan like I said I get my milk from
there and they have a bag of GF tortillas that really like... I may
grab a couple of bananas they do have a great GF pie crust they also
have a pretty good GF pizza crust their eggs are a good price... all
of those thing I listed are cheaper than walmart and/or are
glutenfree. That is the only reason that I go there. I dont drink
disgusting ridiculous wine which they appear to have a good bit of,
pretty much everything else is not GF or costs more than any other
store.

trader joes... I am a die hard fan of their house brand whole bean
coffee, the one that comes in the cans... I drink that stuff like a

Have you tried any of the dairy milks that are lactose free? Sometime
last year I bought some, not because of lactose issues but because I was
out of milk and it was the only milk left in the dairy case at the
nearby store. It was (IIRC) 2% milk and tasted exactly like... milk. :)
The bonus is it doesn't spoil nearly as fast because of the
pasturization process.

I have nothing against almond milk, soy milk or oat milk. I know some
people just plain don't like milk or have issues with lactose. If you
like it, great. But, to be clear, what you're using is not "milk". ;)

Not really weird, but it sounds like animal cruelty. When my little dog
Sampson was a puppy, my [ex] husband had set a glass of Jack Daniel's &
coke (UGH!) on the coffee table. I was in the kitchen; walked in to
find Sampson had jumped up and was drinking it. That poor pup was
sloshed out of his mind... staggering and bumping into walls, and he was
a crying drunk to boot! It was purely an accident but it was a pitiful
sight. I'm pretty sure he had a hangover when it wore off. It's not a
good idea to give pets alcohol no matter how cute a "trick" you (the
collective you, as in "take a video for Youtube!) think it is.

Yes. I started getting lactose free milk a couple months ago. I seem to
be getting away with it. I have actually been getting away with having
a mug of cocoa at night. It costs more than twice as much as regular
milk. On the positive side, it has a long shelf life. I don't find
myself having to make pudding to use it up before it turns sour.

I don't dislike the taste of milk. It is just that I have too much
experience being expected to drink something that felt like phlegm going
down my throat and left me with gas, cramps and the trots. The thought
of drinking milk just doesn't appeal to me. I know that soy, almond and
oat milk are not milk, but they are viable alternatives for my purposes.
Just don't expect me to drink a glass of it because the idea of milk
as a beverage just doesn't appeal.

My brother used to have a dog who loved beer. A few times when we were
sitting around on a weekend having a few beers, Mike would go to a line
empties sitting on the ground and systematically knock them over and
step on the tops to push them down and lick up whatever came out.

My dogs have all been quite different. One would get quite upset if
offered any kind of alcohol.

there was a time where it was a necessity but since we have developed
water filtration it just is not needed

I saw in another post you were thinking about acorn coffee. I only know
about this because of seeing some documentary or some such thing on
Native American cultures and ways they used ground acorns. If you try
it I'm guessing it probably won't taste very good... ;)
