What's the advantage of stuffing them over just grilling them and
having stuffing on the side?

I've never found an advantage. It can be tricky to get the stuffing
cooked without overcooking the pork.

I usually sear the chops, put the stuffing in the pan, then put it
in the oven to finish. By the time the chops are a perfect rosy-pink
inside, the stuffing is done.

Exactly, Janet. I haven't made stuffed pork chops in a while so it was
a change of pace. Grilling them never crossed my mind.

I once made stuffed steaks. Seen on a cooking show, Great Chefs.

Two steaks hollowed out and stuffed with cooked onions and garlic then
pan seared and fried to med-rare. Deglase the pan with merlot wine and
cook down to thicken a bit. Delicious!

It was scary to potentially ruin a couple of good steaks like that but
it worked well.

The stuffing shouldn't even really get a chance to cook unless you
overcook the chop. Then you have he uneveness of the thing to deal
with - it's not going to cook well on any flat surface.
