Just finished a pesto

Freshly grown basil about 3 cups equal amount of spinach ,
about a cup of olive oil, about a cup of freshly roasted peanuts,
about a cup of Parmesan cheese few pinches of pepper...
Spun up in the food processor for a few minutes until all parts were
finely minced.

It was freakin good, served with gluten free soy noodles, and topped
with parsley and a couple of whole nuts

Well soy noodles are very good, very easy and fast to cook. They do
not stick together if you have extra and put them in the fridge. They
taste no different that wheat pasta.
I cant not eat wheat pasta

I figured you couldn't handle Gluten, but the spinach and peanuts are
what threw me. Never heard of using peanuts. I like it!

Yer allergic to gluten but not peanuts? And what about e. coli in
spinach. That would scare me more than the peanuts. ;)

Sounds good. my favourite pesto is the traditional version with basil
and pine nuts, but it's nice to change it around occasionally. I like
to use cilantro too, for example.

correct I cant tolerate gluten

Spinach is triple washed before it is packaged, I wash it again
usually

Most use pine nuts, I have heard that roasted peanuts have a more
vibrant flavor. I have never tasted it with pine nuts, my neighbor
gave it a 10/10
peanuts I buy raw, I crack them and roast them myself

Most all of my food is cooked by me, I hate that premade pre packaged
food..

I mean I will buy certain types of pasta like wheat pasta.. but that
is all, I grow my own basil
