REC: Jill's Meatloaf

I'm thinking about making this for dinner tonight.

2 lbs. ground beef or meatloaf mixture (gr. beef, pork & veal)
1 small yellow onion, minced
2 ribs celery, diced
1/2 bell pepper, seeded and well chopped
1 tsp. salt
1 tsp. pepper
1/2 c. quick cooking (not instant) rolled oats*
2 eggs, beaten
1 tsp. dried thyme
1/2 c. shredded cheddar cheese
1/2 c. bottled cocktail sauce

Sautee the vegetables in a bit of butter until tender. Add veggies to
the ground meat along with the other ingredients. Smoosh it all
together until well blended. Form into a loaf and place on a rack in a
roasting pan. Bake at 350F for 1 hour. Let stand 5 minutes before slicing.

*Some folks will say "ewwwww" to the oatmeal as a binder. Use whatever
binder you wish. Crushed saltines, fresh bread crumbs, etc. It's the
addition of cheese and cocktail sauce that make this a really tasty
meatloaf.

Of course, the purists can make their own cocktail sauce by combining
ketchup with prepared horseradish (not horseradish sauce). Note this
goes *into* the loaf mixture, not slathered on top. :)

That looks good! I've never heard of oatmeal as a binder. It's been a
few years since I've made a meatloaf; I typically would use breadcrumbs.
Never heard of one with cheese either; grandma made them plain, but
with ketchup/mustard on top before baking (or a bit of brown sugar with
ketchup).

I always put some shredded cheese in, also some diced sautéed shrooms...

And following up to bb's point, a glug or two of dark beer is good, too...

This is my own concoction. If I do say so myself, quite tasty!

I don't have any idea if either of my grandmother's made meatloaf. My
mother made the worst meatloaf in the world. Ground beef with some
minced onions, eggs, crushed saltine crackers, S&P. That's it. She
literally baked it in a bread loaf pan, so it was swimming in grease yet
somehow always managed to be very dry. No, she didn't use the drippings
to make a gravy.

I'm not a fan of meatloaf topped with ketchup. Glazes, especially those
involving sugar, on meatloaf don't interest me. Hence the use of
cocktail sauce (ketchup with prepared horseradish) *in* the mixture. It
gives it a bit of kick and also helps keep it moist. The shredded
cheese adds a bit more interest. :)

Oatmeal works very well, and also some crumbled saltines will do
the trick. Rice works too, but be sure you cook it first. It's a
good use for leftover rice.

Years ago a gay guy named boatwright used to post here until Popeye
ran him off. He posted a meat loaf recipe that I think he called
"13 cracker" or something similar. It called for 13 saltines
crushed and used as the filler. I made it several times and it was
very good.

I get the feeling if meatloaf isn't topped with ketchup or "glazed" Gary
wouldn't like it. My mothers meatloaf was pretty bad but we all ate it.
I doubt a ketchup glaze would have helped.

The meatloaf recipe I eventually came up with is very moist and
flavorful. Try it, don't try it. No skin off my nose. :)

I do like horseradish on a lot of things. I typically go the lazy route
and buy it ground in a jar. I think I have a jar of B&L horseradish in
my fridge now. No cocktail sauce. I occasionally have it for seafood,
but as I see it, it's just ketchup and horseradish, so if I desire it, I
just mix the two to a good consistency.

I've heard him mentioned a few times. I drug a few old posts up to
read. I though Jill or someone said that he was older than Sheldon...
he might not be alive anymore. Sounds like a job for detective Steve...
although he's been slacking... I have no answers on the Victor Sack
case. ;)

That's the *very* basic cocktail sauce ingredients but good stuff
contains more. Two that come to mind right now is to add some lemon
juice and some Worcestershire sauce.

I quit making it years ago as I love the shrimp taste cooked plain and
not dipped in a sauce.

Highly unlikely. Maybe you don't buy shrimp. Commercial shrimpers
flash freeze at sea. Maybe you have a shrimp boat or live by a shrimp
boat dock. You could order in overnight from a shrimboat. You know a
place that keeps them live in a tank within 50 miles (since you go no
further) of your casa.

Maybe you mean you don't buy any shrimp at all only the horsey sauce.

So just where do you get 'em?

Fresh shrimp just isn't an option for me. I am too far from the ocean,
so I have to settle for frozen. I didn't even know about Shrimp when I
was a kid. It was way too expensive. The only way to get it here was to
get the frozen breaded stuff. I loved it. Then we started being able to
get frozen shrimp, either cooked or raw. The pre-cooked stuff is bland

I live next to the ocean and we have some shrimp farms down the road from us. Most of the shrimp I buy is from S. America or from Southeast Asia. I don't know why there's no local shrimp in the markets.

Perhaps the local shrimp all go to restaurant kitchens. Perhaps there are
no local shrimp in the markets for the same reason it can be difficult to find
local produce in supermarkets on the mainland: the supermarket relies on
a consistent supply chain.

I would take honey, maple syrup and melons.

You did say you only "like" fresh not frozen which made me think you
actually like shrimp. I buy flash frozen shrimp in off season. When
it is bay shrimping season I get them that are still jumping. No
question not the same as frozen. Part of the year I stay about 4
blocks from the shrimp dock. Mostly small boats for bay shrimping run
by Vietnamese families. No lobsters here but of course you can get 'em
live in the tank which I do for special occasion. Around Valentines
day some markets have a sale. I like shrimp better than lobster though.
Seafood is a favorite. Last night we poached a nice chunk of halibut
in butter and shallots with a glug of white wine. Finished the
remaining white wine with it. Delicious.

Have I been hurting American feelings lately? You never complained
about that. How could I know? I always say the US is my favourite
superpower and part of the civilised world, as opposed to fascist
