Dinner Tonight 8/3/2020

I had a petite beef tenderloin filet in the freezer older than the
chuck-eye steaks I bought last week so best use that one up first. Pan
seared in a small cast iron skillet, seasoned simply with S&P and a
little garlic. Cooked to medium rare, of course. I seem to be on a
couscous kick lately so that will be a side dish along with steamed lima
beans. :)

I trust everyone here is eating something equally tasty!

We had grilled chicken breasts seasoned with just S&P , potato salad
, glazed carrots and sliced fresh vine ripened tomatoes . We've had
tomatoes with just about every meal lately , and it looks to continue
for the next several weeks . What we can't eat gets washed and frozen
for later . Next year I'm planting some determinate tomatoes so we can
get enough all at once to can some instead of freezing them all .

I'm still using up stuff. Sandwich made of two sourdough rounds, toasted,
topped with Just Mayo, Swiss cheese, bacon, turkey and a tomato slice.
Stuffed green olives and bread and butter pickle slices on the side.

Need to get more tomatoes but will wait until I need something else.

A big salad: romaine, radishes, tomato, hard-boiled eggs, kalamata
olives. Dressed with caper vinaigrette.

It was quite tasty.
