a (healthy) Green salad dressing

I previously posted this recipe as a pesto, I have altered it slightly
to make a delicious salad dressing. A healthy one to boot.

Freshly grown basil about 2 cups equal amount of spinach ,
about a 1/2 cup of olive oil, about a 1/4 cup of freshly roasted
peanuts, few pinches of pepper... a few pinches of salt
Spun up in the blender for several minutes until smooth. add a few
table spoons of apple cider vinegar.. blend again to mix.
Taste add salt or pepper if needed.

How can you taste the salad with all of that on it?

I don't like basil at all, whatever it's added to all you taste is
basil. When I prepare a fresh salad I'll add some fresh herbs but
nothing too potent, my dressing is almost always EVOO with fresh
lemon juice, s n'p, I like some bits of curly leaf parsley or a bit of
dill.

We used to have basil bushes at our condo. It looked like some Vietnamese guy was growing it. Beautiful plants. It was so green, lush, and soft that I'd feel compelled to run my hands over the leaves when I'd walk past. It would make a wonderful rustling noise when the wind blew through it.

The bushes and Vietnamese guy are gone. All that's left is a patch of dirt. That's the breaks but it's also a shame.

I don't care for basil so occasionally I'll make pesto using curly
leaf parsley instead, however I don't really care for that either, to
me it seems a waste of EVOO, Parm, and pine nuts... I prefer pine
nuts for baking Eyetalian cookies. As a kid there were vending
machines all over NYC, even in the subway stations, that for a penny
dispensed a handful of pine nuts in the shell. Somehow to me the
combination of pinenuts, parm, and basil is gross... MAJOR TIAD!
