spatchcocked chicken tonight

I've got a whole chicken thawed. It's going to be a rainy day
followed by many rainy days. Something cooking in the oven sounded
good.
I'll cut the backbone out of the chicken and flatten the breastbone.
Then into a large plastic zip bag with a generous amount of a spice
mixture that I love called Garlic and Herb seasoning from Spice Island
and some buttermilk for a marinade until later this afternoon. I'm
going to try to get a little gardening in during the day.
Then for dinner I'll preheat the oven to 450F, drain and wipe the
chicken dry and rub it with a little corn oil. Lay it flat in a heavy
pan and surround with quartered red potatoes that have been oiled and
seasoned. It should take about 45-60 minutes to roast the chicken. It
will be nicely browned all over and the potatoes will be nicely
browned as well. Asparagus for the vegetable. Some fruit for
dessert.
Not a lot of work to it and it always turns out.

you can put chunks of carrot with the potatoes so all your veggies are
done at the same time. If you cover the surface of the pan occupied
by chicken with veggies, you eliminate spitting and spatter in your
oven.

Don't know if she likes roasted globe artichokes but I saw an episode on
a grill show yesterday... split them in half and spoon out the fuzzy
part in the center. The choke. Parboil (artichokes are fibrous and
tough) in salted water about 10 minutes. Drain, then brush the grill
with oil and put them on the grill. Cook them cut side down first then
turn them. About 10 minutes each side. It was suggested serve the
grilled artichokes with lemon aoili with chives. That is, mayo with
grated lemon rind and chopped chives blended in. Like a "dip". Me, I'd
just melt some butter for dipping the artichoke leaves.

Of course I love asparagus any which way, too. :)

I put the chicken on a rack and the potatoes underneath in a puddle
of chicken stock so they start to steam in the broth, then fry in
the fat dripping from the chicken once that's going.

You did get some nice browning
my potatoes do cook in the chicken juices but I pull the pan out
before I get that much browning, not wanting to get the chicken
overdone. Do you finish with the broiler?

We have been experiencing a long, cool, wet spring. I had hoped to make
a rhubarb pie for a BBQ pot luck on the weekend but the rhubarb was
nowhere near ready, and it is still not ready for harvesting. I spent
most of the last week working on the art festival. Thursday was the set
up and then it ran all week and tear down was Monday. It was supposed
to rain hard on Wednesday so I mowed last Tuesday, thinking it would be
a week before I could get at it again. As it turned out, did not grow
that much. There was lots of rain but no sunshine.

Bottom up: Potatoes, rack, chicken. I have a pan with a circular
well in the middle that holds the potatoes and collects the fat
underneath them to fry. The potatoes are par-boiled first so they
brown/crust better and are perfect at the same time the chicken is.

the grass and weeds are leaping out of the ground here. Dandelions
everywhere but too wet and cool to put plants in other than cabbage,
onions, stuff like that,

Its the same number of pans/racks thing as chicken on a rack! I've
leanred not to cook chicken directly on a baking sheet/pan (unless
it's glass). The metal conducts heat to the bottom side of the bird
too fast. Perefct for crispy potatoes, but bad for birds.

Oh, and the pan foe par boiling the potatoes? Big deal <pbbbt>. It
cleans up easy while the rest of the dinner cooks.

I bake spatchcocked chicken on a rack in a SS pan with no
sticking/burning... I also pull out the rib bones {grab w/paper towel}
for a nicer presentation and easier eating.

The grilled artichokes looked absolutely delicious. Even before I saw
the show, when I was at the grocery store last week the artichokes
looked very nice. I was tempted! But I didn't have a plan so I didn't
buy any. Now I have a plan. Grilled split globe artichokes. :)
