Right on.
I regularly pickle jalepeno slices (love 'em on pizza). Then once some of them get eaten, I add things like carrot slices or cauliflower chunks to the jar.
I just made a batch of zucchini spears, using white vinegar (I *like* the bite) and adding dill (fresh from the herb garden!), black peppercorns and a bit of the liquid from the jalepenos' jar. Should be killers.
This time of year is "What the hell do I do with all these zucchinis?"
