Man, I can't remember the last time I made green beans
that were seriously stringy. They were otherwise truly
beautiful--firm and unblemished, and they were cooked
for 15 minutes in the pressure cooker, but strings they had.

You didn't say where you got them, were they fresh, farmer's market
etc. It's getting hard to find string beans these days unless you are
growing pole beans or heritage varieties. If you see that you have
gotten beans with strings again, just snap off the poky end of the
bean and pull the string that comes with the poky end.
15 minutes in the pressure cooker seems a long time to me but the
beans on your plate are perfect for me.

15 minutes in a pressure cooker! that's way too mushy for us.

8-10 minutes steamed (counting total time in microwave) for a
batch large enough to keep us both happy for a few days.

They were from ALDI. I've bought green beans there a
hundred times, and never any strings.

Up at the store, the cans say "cut green beans", maybe because people hate the stringy texture.

you do know that green beans have many different varieties right?

some can have strings and others don't.

some it varies by when they are picked. if picked young you won't
find a string in them. wait too long and they might start to get
some fibers in them. others it won't matter how long you leave them
they won't get strings in them and the pods will get full of seeds
and they're still edible all the way until they start drying down.

it just depends upon the variety of the bean.

if you get a stringy bean in modern times it is either
because someone is growing an heirloom that still contains
the trait or someone has reintroduced the trait back into
a seed line. it happens - there's many thousand different
varieties of beans.

Yep, about a hundred years ago, my mother made us kids snap the
green beans from the garden. We had to pull those damn strings off
each bean before snapping them into pieces. A tedious job, but they
were might good after she cooked them up.

If you buy fresh beans these days, it might be a good idea to snap
the stem off a few beans to see if the string needs removed, before
cooking up a pot full. Usually, you'll see that little if any
strings are there.

Yeah, it's like hamburger. Back in the 60' and 70's you could COUNT
on a few small bone fragments in a package of ground beef.
Somewhere along the line they figured out how to prevent that.
Haven't bit down on a chunk of bone in 40 years.

It is rare to see a stringy bean, but I always still snap the ends off
anyway. Out of habit? I guess it looks better without the end bits.

I hardly even care. I just open a can and cook it with sliced smoked sausage. I like how the smoky flavor is intensified.

Yes, that's probably the main reason for it. Eating a bit of the stem
is unpleasant.
