Sometimes you see 3 very acceptable steaks packaged
together [CHECKMARK]. High end of the USDA select scale [CHECK].
Some quick math in your head tallying up meat dept coupons and
other discounts = $4.20/lb for 4.65 lbs (Yes, those are
1.5lb/ea steaks) And ..... Sold!

Shanks are really expensive. Fortunately I have no use for beef
stock and my chicken stock comes in a jar.

I didn't realize it was pork, clothhead. The pork I buy is
pale pink.

$5.49/pound here. It only takes a pound or two for the amount of
beef stock that I need. Any steak I'd consider buying is closer
to $18/pound.

The best onion soup comes from homemade beef stock.

I use boxed chicken stock, since its flavor is usually covered
up by a multitude of vegetables.

But even if it was beef, you could tell it wasn't shanks.

$8 for shanks to make onion soup, plus the other ingredients, is
expensive onion soup. I'd use canned or boxed beef broth!

Dairy cows would not be graded and would have been darker red due
to age. These were not them.

The steak last night surprisingly tender compared to the last USDA
Select steaks and a roast I got from them.

Yep. But it didn't look good enough for any other use. It
looked like a bunch of fat and gristle.

Yes, it's expensive. It's worth it to me to have the best onion
soup I can make. When I make onion soup, it's the main dish of
the meal. I know you don't consider anything in a bowl to be
a meal. So sad.

I have a hankering for home made french onion soup. I have enough
yellow onions... white might be better, but I also have a quart or so of
home made beef stock in the freezer. That's enough to make a small
amount of soup, I'm sure. Hmm... I think I also have "brick cheese" for
the top, whatever that is (I don't have any swiss, but the brick was
only $3.49/lb).

I need something with chewable substance. Something that isn't
98%+ water is much more my style.
