I was talking to Hag in the chat channel...She uses the cranberry sauce for
a glaze on pork and Chicken.
Are we talking the cran orange thingie made with say a bag of cranberries
the juice and zest of 1 orange and (well the recipe says 1.5 cups sugar but
that's too sweet for me) so 1/4 cup sugar and 1/4 cup brown sugar.
Dump the lot in a pot at a medium to medium low temp and bring slowly to a
simmer/slow boil await the busting of the berries while stiring every now
and then. Optional stuff are orange liquor and toasted almond slices.
This is awsome as a relish with a turkey too. Keeps about a week in the
fridge (sealed container).

cranberry-orange glazed gingerbread ring cake (sort of an upside-down
cake), a glaze for pork roast, and a "usual" ground turkey
meatloaf-esque thing with a cranberry topping.

Mix a bit of ketchup with the cranberry sauce. This is a great condiment for pork roast or pork chops.
I don't have a specific recipe for this. My ex-MIL used to do this and it was very tasty.

Tastes good with nearly any meat!
Mix the cranberry sauce with tomato sauce and meatballs. The cranberry
sauce will give the tomato sauce a bit of a pert sweet flavor. This goes
great over plain steamed white rice.
Mix with some chopped canned chipotle peppers in adobo sauce and serve
with softened cream cheese and crackers or use as a glaze on meats.

CRANBERRY COFFEE CAKE
1 stick margarine/butter
1 c. sugar
2 eggs
1 tsp. baking powder
1 tsp. baking soda
2 c. flour
1/2 tsp. salt
1/2 pt. sour cream
1 tsp. almond flavoring
1 (7 oz.) can whole cranberry sauce
1/2 c. chopped walnuts
Cream margarine and add sugar gradually. Add unbeaten eggs, one at a time.
Add dry ingredients alternately with sour cream, ending with dry
ingredients. Add flavoring. Grease and flour tube pan. Put layer of
batter in bottom of pan, add half of cranberry sauce and spread around
evenly. Add remaining batter, putting remaining cranberry sauce on top.
Sprinkle with walnuts. Bake in 350 degree oven for 55 minutes. Remove from
pan after 5 minutes of cooling. --TOPPING:--
Mix well 3/4 cup confectioners' sugar, 2 tablespoons warm water and 1/2
teaspoon almond flavoring. Spread over top of coffee cake after it is taken
out of pan, and let topping run over sides of cake.
PINEAPPLE - CRANBERRY PORK LOIN
1 (4 lb.) pork loin roast
Salt & pepper
1 (1 lb.) can crushed pineapple
1/4 tsp. nutmeg
1 can cranberry sauce
1/4 tsp. cloves
Season roast with salt and pepper, and place in slow cooker. Mix remaining
ingredients and pour over pork. Cover and cook for 8 to 10 hours on low.
To serve, slice and spoon sauce over each portion.

computer yet, but I double-checked and found it (yeah, someday I'll get
them all in :) ). Here it is. It's a microwave cake that actually
comes out good. Instead of the 8" square pan I used a ring mold and

CRANBERRY-ORANGE GLAZED GINGERBREAD
YIELD: 9 servings
1½ cups fresh or frozen cranberries
1/3 cup sugar
2 Tablespoons butter or margarine
1 teaspoon grated orange rind
2 cups sifted cake flour
2 teaspoons baking soda
2 teaspoons ground ginger
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
½ cup butter or margarine
1 cup sugar
1 egg
¼ cup molasses
¾ cup buttermilk
Whipped cream
In an 8" square glass baking dish, place cranberries, 1/3 cup sugar, 2
Tablespoons butter, and orange rind.
Microwave on HIGH 3 minutes, until butter is melted.
Stir mixture and spread evenly in pan; set aside.
In a medium bowl, stir together flour, soda, ginger, cinnamon, and
nutmeg; set aside.
In large mixer bowl, cream remaining butter and sugar until light and
fluffy.
Add egg, then molasses and beat well.
Add flour mixture and buttermilk alternately while mixing at low speed.
Pour batter over cranberry mixture in pan.
Shield corners of pan with aluminum foil square.
Place pan on an inverted saucer in oven.
Microwave on MEDIUM (50%) 6 minutes, rotating pan ¼ turn if needed,
halfway through cooking time.
Continue to cook at HIGH 7-10 minutes until center is set not firm.
Remove foil during last 2 minutes of cooking time.
Cool directly on countertop 10 minutes before turning out onto serving
plate. Serve warm with whipped cream.
Now that sounds tasty!

It looks yummy, thanks! I don't have a microwave, so I'll have to
"adapt" it to a regular oven.
Latest Cooking Light has some yummy looking cranberry recipes. Cranberry
tart, cranberry-apple pork ... actually the Sunset arrived at the same
time so I don't know if the cranberry "jam" tart was CL or Sunset. But
it's an excellent idea.
You could put it through the food mill, freeze the results, and have a
cranberry sorbet/granita.

also want to try.

Gingerbread with Cranberry Compote
Your favorite gingerbread recipe
Compote:
16 ounce an of whole berry cranberry sauce
3 cups pineapple chunks drained and cut in half
1/4 c brown sugar
1 teaspoon cinnamon
1/4 teaspoon nutmeg
Whipped Cream
Combine ingredients in medium sauce pan and heat until cranberry sauce is
melted and sauce is warm. Serve over gingerbread and top with whipped cream
