I used about 2 pounds of fresh ground beef and a couple of big sausage links
that I squeezed out of the casings cuz that's all I had and they'd been in
the freezer for a couple of months waiting to be used. I had some Napa
cabbage left that needs to be used so I fine grated some with an onion in my
mini processor. Swetted the onion/cabbage mix in olive oil/butter mix and
cooled it before adding to the meatloaf mix. Added catsup, parm cheese,
seasonings, eggs, bread crumbs and gooshed it all together. Shaped into a
loaf and it's now baking in a 375 degree oven for the next hour or so.
Can't wait to see the flavor that the cabbage adds.
Caesar salad with grilled chicken. Fresh bread from the bakery.
Spent the weekend visiting the in-laws, eating too much rich
food. Lunch was a grilled cheese sandwich and (mostly)
homemade vegetable soup.

The flavor and consistency of the meatloaf with the finely grated cabbage
was really good and an improvement! It made the meat much moister. Sort of
like adding applesauce to a cake mix does.
She has one last big sausage remaining that's still in its casing.

I generally add chopped mushrooms to meatloaf for a similar effect, but
I like the cabbage idea! Much less expensive. <g>

Ground just before using. The cells of the meat haven't been crushed and
broken up (more cell membrane exposure) until needing to use. Once the
cells are crushed, they lose moisture.

I do. I got a grinder about a year ago and I'm glad I did. It took a few
tries to find the best meat to use. For example, the first I tried was a
top round roast. Ick. No flavor, too low in fat. Now I know why we
smother roasts like that in gravy. Chuck is good. I'm waiting to find
brisket on sale and try that.
