Creamy Chicken Enchildadas (Suizas)

2 cups cooked chicken -- cubed
4 ounces green chiles -- chopped
7 ounces salsa
2 1/2 cups Cheddar cheese -- grated
8 flour tortillas -- 6-inch size
2 cups heavy cream
1/2 teaspoon salt
green onion -- chopped
Preheat oven to 350 degrees F. In a mixing bowl, combine cubed chicken
breasts, green chiles, salsa and 1 cup of the grated Cheddar cheese.
Soften flour tortillas by dipping them in hot water. Place 1/3 cup
filling on each tortilla. Roll up and place seam-side down into greased
9 x 13-inch baking dish. Mix together heavy cream and salt. Pour over
enchiladas. Sprinkle remaining cheese over enchiladas and cover with
aluminum foil. Bake for 25 to 30 minutes, or until mixture is bubbly.
Garnish with chopped green onion. Serves 6.

White Texas Sheet Cake

1 cup margarine
1 cup water
2 cups flour
2 cups sugar
2 eggs -- beaten
1/2 cup sour cream
1 teaspoon almond extract
1 teaspoon salt
1 teaspoon baking soda
FROSTING
1/2 cup margarine
1/4 cup milk
1 cup chopped nuts -- optional
4 1/2 cups powdered sugar
1/2 teaspoon almond extract
Preheat oven to 375 degrees F. Place margarine and water in large
saucepan. Bring mixture to a boil. Combine flour and sugar in a bowl.
Add to hot water. Add sour cream, almond extract, salt and baking soda.
Mix well with a heavy spoon. Pour into a greased and floured 10 x
15-inch jelly roll pan. Bake 20 to 25 minutes, or until the cake is
done. Make frosting while cake is baking.
Frosting: Combine margarine and milk in saucepan. Bring mixture to a
boil. Remove from heat and add almond extract. Carefully add powdered
sugar. Beat with a wooden spoon until smooth. Add chopped nuts, if using
and stir in gently. Pour frosting over warm cake and spread with
spatula. Makes 24 pieces.

1/2 cup corn oil
1/4 cup cocoa
1 cup water
1 teaspoon baking soda
1/2 cup buttermilk
1 teaspoon cinnamon
2 cups flour
2 cups sugar
2 large eggs
1 teaspoon vanilla
1/2 teaspoon salt
FROSTING
1/2 cup margarine
1/3 cup buttermilk
1/4 cup cocoa
4 cups powdered sugar -- plus 1/2 cup
1 teaspoon vanilla
Preheat oven to 400 degrees F. Bring margarine, corn oil, cocoa and
water to a boil in a large saucepan; stirring constantly. Remove pan
from stove. Stir baking soda into buttermilk; adding to cocoa mixture
along with cinnamon, flour, sugar, eggs, vanilla and salt. Stir until
well mixed. Pour batter into a greased and floured 9 x 13-inch pan. Bake
20 to 25 minutes. Ice with Cocoa Frosting while cake is still warm.
Serves 16.
FROSTING: Bring margarine, buttermilk and cocoa to a boil in a medium
saucepan. Remove pan from heat. Beat in powdered sugar and vanilla. You
may need up to 4 1/2 cups. (The recipe originally called for a 16 oz.
box of powdered sugar). While frosting is still warm pour over cake.
Top with nuts, if desired.

Cinnamon Swirl Bread

6 3/4 cups flour -- see directions
2 packages dry yeast
2 cups milk
1/4 cup sugar
1/4 cup margarine
2 teaspoons salt

CINNAMON SUGAR
1/2 cup sugar
2 teaspoons cinnamon
water
In a large mixing bowl, combine 3 cups flour and yeast. In a saucepan
heat milk, sugar and margarine just until warm (115 to 120 degrees F)
and margarine is almost melted, stir constantly. Add to flour mixture;
add eggs. Beat at low speed 1/2 minute while scraping bowl. Beat 3
minutes at high speed. Stir in as much remaining flour that you can stir
with a spoon. Turn dough onto lightly floured board. Knead in enough
flour to make a moderately stiff dough. Knead unitl smooth and elastic;
6 to 8 minutes. Shape into a ball. Place in a greased bowl and round-up.
Let rise in a warm place until double; about 1 1/4 hours. Punch down and
divide dough into 2 pieces. Roll out dough and brush with water.
Sprinkle half of cinnamon mixture over dough. Roll up as for a jelly
roll and seal. Shape into a loaf and place in greased 9 x 5-inch loaf
pan. Repeat with second piece of dough. Let rise until nearly double; 35
to 45 minutes. Bake in a 375 degree F oven for 35 to 40 minutes. To
prevent over browning cover with foil during the last 15 minutes of
baking. The bread is done when a instant read thermometor measures 200
degrees F. Makes 2 loaves.

Oven Potato Planks

3 medium potatoes
2 tablespoons corn oil
1 teaspoon salt
1/2 teaspoon sugar
1/2 teaspoon paprika
1/4 teaspoon dry mustard
1/8 teaspoon garlic powder
Preheat oven to 400 degrees F. Cut potatoes into 8 wedges. Place in
jelly-roll pan sprayed with nonstick spray such as Pam. Drizzle with
corn oil and toss lighty. Combine salt, sugar, paprika, dry mustard and
garlic powder in small bowl. Sprinkle over potato wedges. Toss until
wedges are well mixed. Bake until tender; about 50 minutes. Serves 4.

4 eggs, hard-boiled -- peeled
1/2 cup mushrooms -- sliced
1/2 cup ham -- cubed
1 tablespoon margarine -- approximate
1 can cream of mushroom soup, condensed
dash white pepper
Melt about 1 tablespoon margarine in large saucepan. Saute until
mushrooms are softened and ham cubes are heated through. Add condensed
Cream of Mushroom soup and a dash of white pepper. Stir well. Fold in
sliced hard-cooked eggs. Heat through while stirring gently. Serve over
biscuits, toast or rice. Serves 4.
