Superfood Salad

I was at Fred Meyer this past week and I went to the deli to get some
sliced turkey and I saw this salad. It had a sign on it saying
"superfood salad". It was really green and good looking so I bought
a container and took it home.

OMG. Love it. So I picked it apart and googled around and put
together what should be
the same thing. It's going to be a regular on my list of things to
make.

Kale - chopped really really really small (use lots, this salad is
pretty green)
shredded carrots - buy the little bag of organic shredded carrots
red onion- very small dice
grape tomatoes - bitty ones or larger one cut in half
edamame (the only thing I was hesitant about)
cashews
dried cranberries
fresh blueberries
sunflower seeds

raspberry vinaigrette

It's really really really good. My only problem is the edamame. I
don't do soy, generally and raw soybeans are really hard on your
system. I've decided that baby lima beans will be the best
substitute for the edamame. You can buy them frozen and just run them
under warm water to thaw them out and throw them in the salad.

I'm going grocery shopping tomorrow so I'm getting the stuff to make
this. I'll let you know how they are in the final dish.

If you are really going for healthy, buy a carrot and shred it
yourself.

Yeah, I know. But sometimes I'm lazy and those organic shredded
carrots are soooooooo easy ;-)

Got the ingredients and made the Superfood Salad today.

Yum.

I used:

kale
shredded carrots
red onion
grape tomatoes
baby lima beans
cashews
dried cranberries
fresh blueberries
sunflower seeds
raspberry vinaigrette

Are lima beans a super food? I'm not aware of that one. I try to
eat a large range of fruits and veggies every day. (Yes, if I
were going REALLY low on crbs, I wouldn't be doing that. I don't
eat the carbiest such things though.)

You could add something that is yellow to that like yellow bell
pepper.

The original recipe I deconstructed used edamame. I don't do soy.
BABY lima beans are nutritionally close to soy, the only real
difference is that the limas are higher in carbohydrates. They are
equal in protein. I used the frozen ones and just thawed them out
and put them in the salad. They are really delicious in there.

The yellow and red bell pepper is a good idea. Might add those next
time.

Okay. Got it. I was just curious because I am into phytonutrients.

I try not to overconsume soy, and I pay attention to the form it
is in and whether it is GMO. I probably should consume NONE, however.

You are right.....especially for women, soy is iffy at best. I just
try to make sure I don't eat ANY.

I love tofu and eat it MUCH less than I want to. If I felt it was
wise, I'd eat a lot more of it. I like soy milk (Asian; not the
stuff that abounds at normal US grocery stores) but only drank it
on extremely rare occasions. I REALLY try to avoid things that
would provide a megadose of isoflavones.

I served this over the Labor Day Weekend to guests and they RAVED
about it and wanted the recipe. It is one of those things that the
more you eat it the better it tastes and your body gets all happy and
stuff.
