Unidentified orange gunk in canned bamboo shoots

Here are a couple questions born of ignorance and concern.

The last three (yes, three [3], count 'em) cans of (young) bamboo
shoots that I've opened have had little clusters of orange globs in
them, usually attached to the shoots themselves.

What *is* that orange stuff? Is it normal or evil?

Not knowing for sure, I figured the safe thing to do was to dump them,
feeling wasteful and cheated at the same time. Not to mention
irritated that I'd have to look up a new dish to make...

Mark,

Maybe you should be asking people who know about bamboo - the
American Bamboo Society. The URL for the ABS web page is:

I've never seen any orange globs on our young bamboo shoots, but
that doesn't mean much, since we only grow three kinds of bamboo.
