Need advice on converting a water-color painting into XS chart

Hi !

I've just received some pictures of my uncle's water-color paintings and I
realize they would look really good in cross stitch (mostly flowers and
"still life").
I'd like to convert them but what software would you advice ? Do I need a
professional one ?
Must I scan the original piece or a very good photo ?

kind of thing that about 1/3 of the way through you start asking yourself "What was I
thinking???" <G> but in the end it's well worth it. The coolest thing to do is, after the
stitching is done, frame both the stitching and the photo and display them together. It
absolutely fascinates people.
