Seems to me a good way of doing it.

If the far end of the beanstalk is 78000 km from earth's center, it's
velocity would be about 5.7 km/sec, well above the 3.2 km/sec escape
velocity at that altitude. The piece you let go of would be lost forever.

But that would be a worthwhile sacrifice to salvage the entire beanstalk.
