Here are two titles which I have found to be of great help:

Drawing Lessons from the Great Masters
by Robert Beverly Hale, pub. by Watson-Guptill/NY
ISBN 0-273-00894-3

Learning from the Old Masters
by Joseph Sheppard, pub. by Watson-Guptill/NY
ISBN 0-8230-2672-8

The first book is, as the title says, on drawing, and the
second book recreates, step-by-step, the techniques in
oil paintings, including palettes and probable mediums and
their recipes, of the masters.

A very detailed and classic book on this topic is The Craft of Old Master
Drawings, by James Watrous. Also, another book with some info on this is
Drawing in Early Renaissance Italy, by Francis Ames-Lewis -Judy

My favorite in this category is "Drawing Lessons From The Great
Masters" by Robert Beverly Hale. 100 great drawings analyzed/figure
drawings fundamentals defined. It is available from on-line book
stores such as Powells & Amazon books.
