After the last time Asgard died, the gods' souls got scattered into
human bodies. They pretty much kept those bodies in the new Asgard.
For other instance, Loki wound up female, though he got some
masculinity back after doing some horse-trading with Thor and Sif.

You had it right up until you said they kept those bodies in the new
Asgard...other than some slight design variations (basically no more
than costume changes), most of them look more or less the same as they
always did in the Marvel version.

Loki only wound up female because he hijacked Sif's Asgardian body
(and magically altered it so it wouldn't be immediately recognized as
such)...eventually he disgarded said body and returned to his true
form which was always male and looks pretty much as he always did.
