Do you recommend any utilities or VST plug-in's that will equalize the
volume of a podcast? I know of "The Levelator" by GigaVox Media (and
recommend it) but I want a little more control for it works for a set
volume and does not work on all mp3 for some reason. I am learning
and developing my own podcast and want to use it with that:

I use Waves L3 Multimaximizer. It's amazingly powerful, very flexible,
mastering engineer grade, and reeeallly expensive. I also highly recommend
Izotope Ozone 3.
If you are recording in wav format, you should do all of your
mastering/post-production before you convert to mp3 (that should be your
last step).

It's also worth mentioning that Sony Sound Forge comes with a terrific
plugin called Wave Hammer that is a kind of all-in-one
compression/normalizer mastering app with a ton of presets that's also very
tweakable. Very useful.
