This is a little disturbing. Has anyone seen this before?

Yes.
I have some 9 or 10 plone sites that I either administer directly or have
some responsibility for, and almost all of them have a POI issue tracker
that merrily sends me mails when it should. ONE has an issue tracker that
sends me mails like this - where there is a blank line before the:
Content-Type: multipart/alternative; boundary=
- and of course, when there's a blank line before a header, it's no longer a
header. If you can dump that email to a file, remove that line, and import
it back into your mail, you'll see exactly what it is and why you got it.
Of course, that doesn't mean you'll be closer to the answer than I am. If,
in fact, it was POI in your case too, at least it might suggest it's the
product and not a general problem with any emails that are sent.
Ah-hah! Here it is, and yes, it's Poi!
A new issue has been submitted to the **Skin Upgrades**
tracker by **Thomas Purcival** and awaits confirmation.

**Issue Details**::
Font colour in tracker is black on black. It needs to be made
readable.

See: http://plone.org/products/poi/issues/198
I'll add this information to the bug report.

See the bug report for a patch.
