Pt-Archiver Suggestions on Archiving from one DB to another

Hi,

Currently I am using pt-archiver to archive large volume tables to csv/delimited files. However, several tables need to be archived and loaded into another "backup" or less volume db server instead so they can be accessed that way. 

The columns on these tables will be modified frequently via web app, so therefore, I cannot have fixed table structures on the archived db. 

If you guys have any best practices when implementing this please let me know. Also, if this post is unclear in anyway.
