We hope you all have been enjoying springtime, as we are. We're
staying busy with field work and have quite a bit of the small-grain
planting done. Corn and soybeans will come next, in a couple of weeks.
SUMMER SCHEDULE
Looks like we have a busy summer in store, too. Check out the new
summer schedule just posted on our website: www.paulsgrains.com .
We'll be attending the Des Moines Downtown Farmer's Market for the
first time this year -- we are planning on being there at least 4
times through the summer, starting with the opening day, May 12. If
you'd like to place a special order to pick up there, or just want to
stop by and see some of our most popular items, please do so! We'd be
delighted to meet you.
If any of you will be passing through the Amana Colonies area this
summer, stop by Henry's Village Market at 4125 V Street, Homestead,
Iowa. They're carrying a selection of our best selling items now, and
you can place orders to be picked up there. Also, don't forget about
our other central Iowa outlets: Linn Street Market in Marshalltown,
and Northland General Store in Des Moines. And of course you can
always come out to the farm any time -- just call ahead to make sure
we'll be here. If we're home, we're open. :-)

Here's a recipe we've really enjoyed lately: these rolls are easy to
make and have great flavor!

DILLY ROLLS
2 c. small curd cottage cheese
2 Tb. butter or margarine
4 1/2 tsp. (2 pkg.) dry yeast
1/2 c. warm water
2 eggs
1 Tb. dill weed
1/2 Tb. salt
1/2 tsp. baking soda
1 Tb. dried minced onion
1/4 c. sugar
4 1/2 c. flour (we used a combination of whole wheat and unbleached)
In a saucepan on medium heat, cook cottage cheese and butter until
butter is melted. Let cool.
In a large bowl, dissolve yeast in water. Add all ingredients except
flour, including cottage cheese mixture. Mix well. Add 3 c. flour,
beat til smooth. Add enough flour to form soft dough, knead several
times on floured surface. Place ball of dough in greased bowl and let
rise until doubled (about 1 hour).
Punch down dough and form into 24 balls. Place in greased 13x9x2"
dish. Cover, and let rise until doubled (about 45 minutes).
Bake at 350 degrees for 20-25 minutes, until golden brown. Brush tops
with butter and serve warm.
