One of the features of Opera that I used on occasion was the ability to
mimic another browser by sending the necessary text string via the HTTP
query/response.

With Opera 10, I seem to have lost that capability. AFAIR it used to be
in the

Tools -> Preferences
Advanced Tab -> Network

Was this removed with version 10 - or moved to a different location?

It has to be done on a per site basis now. Load the site that needs
the override, right click on a blank (or at least non-image) part of
the page, and select "Edit Site Preferences". Then select which
override you want from the network tab.

Or go through

Tools -> preferences -> advanced
-> content -> manage site preferences

to add the domain manually and/or edit the ones you've already set
