I normally read my news articles sorted by subject, but I had to sort by
date the other day. Now the date field is stuck as the default sort
field. I click on Subject and it sorts nicely, and I use the View/Sort
By setting to set the sort field to Subject, but when I restart
Seamonkey it goes right back to the Date field as the sort field.

Is there a way to fix this? Thanks.

try sorting from the View, Sort By menu

As I stated above in my post, I tried that. Didn't work.

Any other ideas would be appreciated. Thanks.

close SM, and delete the file localstore.rdf from the
SM profile. Restart SM, and reset everything.
