the address used in the From: header is taken from user-mail-address,
not from mu4e-my-email-addresses. mu4e-my-email-addresses is used to
determine which messages are to be considered as being sent by/to you
when indexing.
BTW, the documentation on mu4e-my-email-addresses says that it has been
made obsolete in the latest mu4e versions. you should use
mu4e-user-mail-address-list instead.
