Adminimnize is the big one with a fancy UI:

You can also do some filtering to remove menus in functions.php or a functionality plugin (more efficient than a plugin).

I think a plugin exists for this, but I can't remember what it's called...

Thanks for the replies. What we needed to do was to allow a particular user to see stats in the dashboard but not have access to any other admin areas. They are using Jetpack's site stats feature. Some of the plugins I looked at were not addressing the dashboard access. The one I found that gave the best control was called Advanced Access Manager. It lets you block access to anything in the admin area on a per-user basis (many other plugins allow you to modify the user roles only).

How about User Role Editor?

You can create a custom role that just lets them see/do exactly what
you want them to see/do.

Probably similar to role editor. but i've used Advanced access manager
plugin for this.
