I *might* upgrade to Thunderbird 2.0, but first I need to know if I will
still have some required functionality.
Can I edit message sources with Thunderbird 2, either natively or with
an extension?

Depend on what you have meant by 'message sources' . If you mean message
body ( not header ) then you can do it by selecting a message and goto
Message > Edit as New .
There is an extension for "Thunderbird: 0.5 – 1.0+" to modify message
header "https://addons.mozilla.org/en-US/thunderbird/addon/875"
I do mean the source, including the headers, and I am referring to the
capabilities of the extension you mentioned, but that extension is not
compatible with TBird2.

Please note these tricks can only enable that extension but that
extension might not work properly .
