I admit I haven't read then entire Weave site and project plan, so I
apologize if my question is answered some place else.
Will extensions and/or themes be able to be sync'd? If if so, how
about preferences for the extensions? Being able to choose which
extensions and whether to backup the preferences for those extensions
would be awesome.

Realistically, no one RTFMs... but there would many fewer questions on this list of people *used* Weave before asking questions/making feature requests.

All of this exists.
Weave provides a framework for other extensions to sync preferences. AFAIK no 3rd-party extension actually does so, yet.
When they do, you'll be able to control what preferences are synced in the Weave's options, under "Data." It lists the different data sources Weave will sync.
But there is NO MANUAL to read. There are three places with
inconsustent information, that not easy to perceive unless you are in
the know of the subject beforehand.
Now I remember that some add-ons showed me options for 'Weave
authentication' or alike, but since I didn' t know what is that, I
opted out of that option.
Can you please list few widely used add-ons that according to your
information uses Weave authentication and thus can allows sync of
parameters?

As I already said, AFAIK, no 3rd-party extensions use Weave yet.
You seem to have seen an extension that did... what was it? It'd be good to add somewhere to the aforementioned wiki.

As a MMTC student[1] I know that one of my classmate plan to build an extension which combine Weave and Ubiquity technologies. But I don't know if he have started to work on it : https://wiki.mozilla.org/Education/MMTC/Projects/Louis
This is cool. Thanks for letting us know about it. One of my "other" favorite extensions is list.it from MIT. This lets you jot notes (like stickynotes) in a sidebar that are saved in the cloud and can be viewed/edited in your other firefox installations.

The add-ons that offerred Weave authentication could be Twitter
related, like TwitterFox or Snowl.
But the message about that appeared just one time along with Weave
logo. I was indeed surprised that someone was using Weave
authentication. As I have already authorised myself with the
application, this message never appeared again.
But I am not completely sure that it was a Firefox add-on, but as far
as I remeber I' ve seen that twice. Could it be that some another web
service like FriendFeed offers Weave authentication?
