So after watching a tutorial on how to make you own theme with
Persona.  The guy in the video said I had to select preferences and
then check the box next to "Show Custom persona in menu" option.
After that you could create your own theme.

Well now all of a sudden the custom option is missing from the menu
even though the box is clicked for it to appear.  Any idea on how to
fix this?  I tried to uninstall it, but that didn't seem to work or I
removed it incorrectly.

I haven't heard of this problem before.
When you uninstalled Personas, did you do a full uninstall, or just disable
the addon? Did you restart Firefox before you reinstalled it?
I can't think of anything else to try.

If you have already used the custom persona option on the Personas
menu to create one, the option may now be masquerading under the name
you gave to the last custom persona.  If so, it's reusable - just
choose edit.
Hope that's what it is.
