While OpenFire has support for an external database, MongoDB is not among their current list of support databases. http://www.igniterealtime.org/builds/openfire/docs/latest/documentation/database.html

Since it's fairly abstracted already, it doesn't seem like it would be very difficult to add MongoDB support, but to my knowledge, it doesn't exist yet. If you end up adding it, please let me know and we will add it to the MongoDB site.
