recipe for the brine.
I would not be opposed to trying this. But I would rather try some
first, to see if I like beef bacon enough to bother making my own.
nope, but many grocery stores seem to carry turkey bacon,
which i find isn't half bad.

You can order it from Thielen Meats in Pierz (famous for their regular
bacon), or make the drive up and pick some up yourself. They also make
beef Italian sausage. Their double-smoked hams are first-rate, too.
Seriously, it's a nice drive. Gawk at the buffalo herd on the outskirts
of town, then select their various parts at Thielen's.

or lunch at the "Bank." I will second Theilen's in Pierz (as opposed to
Theilen's in Little Falls and family dispute - but I digress)

that they sell Midamar brand prepackaged "sliced breakfast beef". Sounds
like bacon!

Just in case anyone else is interested.
I found some John Morrel branded Beef Bacon at the Rainbow near the Hub
in Richfield.
It is actually pretty good - I never liked turkey bacon, but this is
fairly similar to pork bacon. Not quite as crisp, but it will work for
me.
