Last time I did it I asked the staff at check-in how many people use it.
They said it varies a lot, from not many to (IIRC) a couple of hundred.

I suspect looking at it as London - Amsterdam could be misleading, there
is more (somewhere in the Netherlands) - (somewhere in England) traffic
than just the city pair. There seemed to be more people on the trains at
the British end, with people using cars from the Dutch end.
