On making my will, with the help of a volunteer legal service, I visited the Salvation Army local office and I think learned that:
1) SA will hold a copy of your will;
2) SA will not act as your will executor, normally;
3) SA will act as your executor if you donate all your possessions to them. Not sure what possessions are required for SA to act as executor.

I did invest in a cremation policy with Alaska Cremation Society, but since learned that they require an insurance policy that will act on your behalf and won't return the $1,200 paid, so watch out for that.
