I have this open jar in fridge for a while lost count how long do
mustard's go bad in fridge? There is no expiration dated. I assume
because of its acidity it could last a very long time in the
fridge..am i wrong?

A jar of dijon mustard cost what? Two bucks? Trip to the ER cost how
much? Add in lost wages, pain and suffering, long time effects and
other unforeseens and pretty soon you are risking a lot to save a
little. Not good odds. Besides, you must not have liked the stuff in
the first place if you don't know when you got it. Frugal or stupid
cheap?

Do you have children? Make 'em a sammie and see what happens. Report
back.

From Frenchs' web site:

Q: What is the shelf life of French's® Mustard?

A: Quality, freshness, and flavor are top priorities at French's®. You
may have noticed that we recently changed to a "Best When Used By
Date" coding system on our packaging. This is not an expiration date,
however; the date stamped on the bottom of the bottle is the date by
which we recommend that you use the product in order to ensure its
optimal flavor, freshness, and quality. The product will generally
maintain good flavor quality for two to three months after that date,
if refrigerated. While refrigeration will help maintain flavor, it's
not necessary to refrigerate if you prefer to consume your mustard at
room temperature.

If your French's® product does not have a "Best When Used By Date,"
look for the Julian date production code on the bottle. This code
consists of a letter followed by a five-digit number. The letter
represents the manufacturing location, the first two numbers represent
the year the mustard was produced and the final three numbers
represent the day of the year: this would be a number from 001 - 365.
The recommended shelf life from the date of manufacture of French's®
Mustard is twelve months in a squeeze bottle, eighteen months in
glass, and six months in a packet.
