I want to always open word with the text justfied rather that left-aligned,
but can't find a way of creating this default? Any ideas?

Create a paragraph style with the text justified.
Open the normal template
Apply the newly created style to the cursor position.
Type a character.
Delete it.
Save the normal template.
New documents based on the normal template will open with the new style at
the cursor.

See http://word.mvps.org/FAQs/Customization/CustomizeNormalTemplate.htm

I would strongly suggest that you NOT format the Normal style as justified.
Instead, modify Body Text and apply that style to default empty paragraph in
Normal.dot.
